      You guys should do a series of an ingredient used in different cuisines...like tamarind in Thai and Indian cuisine. It would also explore what different techniques do to same ingredient as well as different combinations. I love this idea of mine.

    I love how at first it seemed Chef was timid, but once she got into talking and teaching, she was a wealth of knowledge and in her comfort zone. Amazing guest!

      I think it's great you are talking about Chef's wealth of knowledge and what an amazing guest she was. I totally agree! Thought you might find it helpful to throw in the thought that one culture's timid/shy cues can be another culture's respectable and polite mannerisms when first meeting someone or even a mixture of both things. I'm not saying one way or the other in this instance, but it's something to consider when getting first impressions. For sure, she was quieter and less animated at first, but not sure about the "timid" or "shy." Cheers.

      Even the most shy people tend to love to tell people about things they're passionate about. I think that's what we are seeing here. She seems to love to cook.

    As a Thai I can say you guys got lucky. Not very many people would bring Cha-om onto a show. It's quite a pungent plant used in dishes not often shown in the west. And the fact that she just pounded a namprik kapi for you fresh, wow.
    edit: I commented before I saw what she brought out for #3. My favourite, kaeng taipla. Double respect.

      In Queensland Australia cha-om it is classified as an invasive prohibited plant. You must not keep, move, give away, sell or release into the environment. Penalties may apply.

      @@karengreenfield7773 Yeah that's pretty common. As Ozzyland is basically a giant island, with a fairly varied and often "good" climate, so many different plants and animals thrive there that don't actually originate there. So it's really easy for things to come in and just drive existing species to extinction.

    Rice whiskey is not whiskey in the traditional sense but distilled white spirit made from rice that is 35-40 degrees. It is also the inspiration for Japanese awamori, and some brands still import rice from Thailand to make awamori to this day.
    April honey's name in Thai translates to 5th month honey (น้ำผึ้งเดือนห้า); the 5th month in the Thai lunar calendar falls aproximately in April. The reason it's the best is that it is the last month before monsoon so the weather is hot and dry, and honey tends to become sticker.

    I’m a Thai person abroad and this ep just showed me the most authentic dishes that’s hard to find and make outside of Thailand. I’m crying. i love the omelette. We also use this omelette in a spicy curry soup called ‘Gang Som Khai Ch-Om’. Next time you can ask the chef to prepare you all kinds of ‘Gang Som’. it’s amazing dish you can put different ingredients in that. My favorite one is Gang Som with green papaya and shrimp.

      Even Gang Som has different variations.I prefer the one with southern paste which is spicier and I prefer bamboo shoot and fish over.
      And it’s sad that it’s 1.40am here in Bangkok ,I can’t get it while my mouth is watering 😢

      @@merryhermit4493 Southern Thai Gang Som (Orange Colored Curry), if you were to order it as a dish in Bangkok, you might have better chance to get a correct one with Gang Leuang (Yellow Colored Curry) albeit no tamarind as an ingredient and a lot more spice.

      Gang Som Cha Om Khai Goong is the only way I would eat Gang Som. I for some reason don't like the other variations.

    I grew up in Malaysia 30 minutes from the Thai border so ate a lot of Thai food as a child. I adored sticky rice as a child because we used to shape it and have competitions with the other children! I’ve eaten at this Thai restaurant and it was amazing! Great food and atmosphere!

    Being from Malaysia, it's such a blessing that we have easy access to good Thai food as we have many local Thais and Thai migrants. It contrasts yet meshes very well with the local Malay, Chinese and Indian food as Thai cuisine is so unique.

    As a Thai, I can say that the centipede part of the thai moonshine is true. Actually, the recipe for Yadong (literary translated as fermented medicine) is very vary from village to village. In some places they would just put the herbs in. In the chinese settlement village you would find Yadong with chinese medicines, botanic, or herbs. Some even put sea horses or cobras instead of the centipede.

    Having learnt how to make some more authentic Thai recipes you have to really appreciate the delicate balance of flavours in their dishes. So easy to go a little too sour or sweet and it tastes wrong. These all look amazing, the omelette and dips appealed to me. Would love to see more!

      The omelette dip is like Thai carbonara
      cause it is the most simple น้ำพริก or spicy dipping
      normally the spicy dipping need 4-5 or more spice in there
      but shrimp paste dipping you need only garlic and chili as spice
      +sweet,sour and salty thing
      But because it so simple it also eazy to ruin
      other spicy dip in Thai use roasted thing or lot of spice for smell
      but this you need shrimp paste and garlic you need to balance those two
      if garlic too much overwhelming shrimp you fuck up but if garlic is not
      strong enough to stop fishy smell of shrimp you also fuck up
      you don’t have any mint or roasted chili or onions or Chinese spice to buffering it

    Ooh so happy to see tamarind and glad to see it used in other cuisines. In south India we use it almost everyday. I have fond childhood memories of eating ripe tamarind pods, straight off my grandfather's tree, in the village. They have a mouth puckering sourness, yet a pleasant sweetness. Those were lovely summers long gone.

    I was really looking to this episode since you teased it as a Thai fan watching this channel and the dishes that were shown are pretty great for showing more unique menu and not just typical Thai dishes there are out there in foreign countries.     Me and my mum went to Rosa's near covent garden on a theatre weekend and were absolutely blown away! The food was amazing, so much better than standard 'british' Thai food that I've had other places

    Lived in Thailand for 6 years, everyday I miss the variety and flavour profiles the Thai cuisine has to offer! It is really difficult to find authentic Thai food in almost every country I have visited since, I am glad you got a chance to try something which isn't commonly found in Thai restaurants outside of Thailand.

    Whenever I mention having spent a lot of time in Thailand, people usually comment about how much they love Thai food. What most people don't realise is that, like other cuisines (Indian, Chinese etc), British restaurant Thai food is little to nothing like what you would have at home in Thailand and the major component that is never really translated is just how spicy the food can get. It's on another level and after a few months of being there, eating breakfast with namprik pao you can get used to it but it's not something we're used to, outside of the Friday night curry where someone tries to order the hottest thing on the menu. The sourness of a lot of food isn't usually in Thai/British cuisine either. I definitely miss sticky rice though! :D

    This is so refreshing to see! As a Thai, I’ve been waiting for moment like this that people get to learn more about Thai food that is outside of what is well know in western standard.
    Just a little fun fact: Ya Dong come in varieties of type and what Thai people believes it would help with. (But mainly it focuses on men’s health) And the name of each varieties is super creative but so hard to Translate and get the same meaning in English 😂.

    Oh I'm so happy to see this!
    Usually when I see a video titled "authentic" something I expect a bad reaction when someone try something new. Thank you for being so open minded.
    As a Thai I really appreciate that she brought something that people don't usually see, it brings new light to our culture. I can only hope that people try more new things and enjoy real authentic parts of the world.

    That fish intestine fermentation sparked a memory. In ancient Rome they had a sauce they used by the ton called Garum, it was fish intestines mixed with salt and fermented in amphorae. It was basically the ketchup of the day and was used by nearly everyone in the empire and in surrounding lands for a very very long time.

    The honey, its a thing!! We call it " Fifth month honey" because it's Summer in Thailand still around that time.
    You know flowers don't bloom much in the heat of the day so, it become so rare to find honey. If you ever see the bee hive it's sure as a treat. The dry heat made the honey a lot thicker than usual and that's made it so flavorful, hearty, fragrant and so yummy.
    For Cha-om, they should have give them a chance to tasting an oyster + cha-om + chili paste, That is the one!!!! Ummmmm just mouth watering from thinking of it :D

    Loved this one! The way the Sorted team is always keen on learning new things is one reason I love this channel. And no matter how they joke around, there is always respect for the cuisines and traditions.
    Was smiling ear to ear at Jamie trying to keep his reactions in after tasting the fermented fish thing.

    It might not be traditional for Thai but I have also definitely used tamarind in marinade and basting sauce. Remember the Monkey Gland sauce from your South African episode? It's not uncommon to find tamarind in there too.
    I love watching Jamie trying to keep a respectful face while sniffing the jar of fish guts 😂
    I really thought that centipede whiskey was just something they sold to tourists but I can definitely see getting both Jager and cough syrup vibes from it.

    Hi, as a Thai I figured I'll give some more tidbits about ingredients in the video. The tamarind is usually use for a 'more gentle/mellow' source of acid/sourness, as opposed to lime (for example) which is a more direct/strong source of acid. Like palm sugar, which is also used as a more gentle sugar than white sugar. Tamarind and palm sugar is less processed therefore retain more delicate/nuanced flavours therefore it'll taste less harsh than its refined counterparts.
    People also eat cha-om raw with nam prik (other vegetables are available), it's a traditional meal here. Nam prik is way too strong on its own, so you need vegetables which are full of water to compensate. Also a way to eat more vegetables, we also have a ton more varieties of nam prik. I like lons (หลน) a lot, it's a less spicy dip that has coconut milk in it, usually has seafood in it (crab or shrimp), it's what I eat with vegetables as a child when I can't handle real nam priks yet lol.
    I'd wager most Southern food that real Southern people eats are way too spicy/hot for the average Thais (me included). The popular menus are kua gling (คั่วกลิ้ง) and gaeng leoung (แกงเหลือง). I remembered having it at a local spot in Phuket once, they have bucketloads of sliced cucumbers to fight the heat, it failed. And many Southern people talk shit about other regions all the time that their foods are so mild or bland, their chilies ain't got nothing on Southern chilies. They're right
    Now, that 'moonshine' thingy. I'd never considered drinking it because the herb names sounds so sketch (in Thai). Most of the names are just some variation of 'it'll make you so horny' like 'forever-erect' (โด่ไม่รู้ล้ม), 'power of the tiger' (กำลังเสือโคร่ง), 'stomping/raging stallion' (ม้ากระทืบโรง), 'reborn elder' (ไอ้เฒ่าคืนชีพ), etc. Now, apparently it's traditional Thai medicine, and that particular arm of the Ministry of Public Health supports it in moderation (it infused 40% ABV drink after all). I'll wait for somebody else to try it before me.....

      @@kayagorzan That are the mainstream recipes. In my village there are 'cobra split' (น้ำลายงูเห่า) with marinade cobra and 'Wasp nest' (รังต่อ) with the actual wasp nest in there.

    I've have only read of cha-om in recipes and never seen it even though I live in the northern tropical region of australia. i learned to make thai food for my husband, because the food that we get in restaurants isn't what he actually used to eat regularly. super happy to see things like nam prik kapi and southern thai fish curry being featured here. can't wait to track down some ya dong!

    The “yadong” thing is very unique not every thai ppl had that, they mostly consists of herbs but their r many weird ones made in rural places too, for example the centipede she was talking about, sometimes placenta or other thing I can’t remember.

    You brought up an interesting point about fish and spice. One of my favorite dishes is a Mexican grilled whole fish with salsa. I love the contrast between the delicate fish and spicy sauce and there are many versions in Latin America.

    Being Thai myself, I’m so happy to see this episode being made. Personally I love cha-om in omelettes…. Maybe because I’m from the south or the way I grew up in Thailand, I’m used to the “smell” and other “smelly” stuff that may be too pungent for people in the west

    Omg Chef Saiphin is brilliant! I have so much respect for her and admire how she explained the food very well in a way that foreigners can have a better understanding. Kang-tai-pla, cha-om, namprik-kapi are all my favs! 😋 My dad usually cooks these dishes for us and they still give me joy every single time.

    Thank you Chef Saiphin for bringing SUPER authentic ingredients and unique dishes to the show! As a Thai I eat Cha-om omelette quite often, go great with namprik-kapi. For Kaen Tai-Pla and Ya-dong only sometimes as they are quite strong (even for Thais lol).

    As a Thai, I love fried eggs with climbing wattle or acacia pennata omelet (I really have no idea which name is most commonly referred to in English) served with shrimp paste dip. I've never added shallots to the omelet, only pennata.
    I remember seeing a large jar of Thai moonshine with a huge centipede inside when I was a kid. It's creepy.
