I made the chocolate chip cookies exactly as described, except I used the peanut butter there instead of the cashew butter, and wow was I impressed. When I finished eating some, I got that thought of "I should eat something else since I just had cookies", but then remembered how healthy these were. These could practically be a full on night-time meal because of how nutritious they are. I recently cut out added sugar and this is a great way to satisfy that sweet craving!!
I am not vegan but these cookies looked so good that I had to try them. I made the chocolate cookies All I can say is that they were amazing. I can’t stop eating them. Absolutely delicious.

Just made the choc chip version, very delicious soft cookie. I added golden flaxseeds, oats and pecans to my batter, it has a lovely crunch to contrast the soft cookies. Edit: If anyone is struggling with a loose batter, I definitely recommend putting the batter in the fridge to firm up before baking, just like you would a standard cookie dough. Also for my thin cookie lovers, letting the cookies set up overnight gives them a more sturdy texture. Just had another cookie for breakfast and it was even better than the one last night.
Omg, these are fantastic! I baked the regular version of these in a 9 x 9 parchment paper lined pan (to be able to remove for cutting) and baked for 35 mins. They are even liked by people who eat regular sugary desserts. The only thing is I don’t intend to tell people they have chickpeas in them until after they have told me they like it. LOL.

I've made two out of three so far - the regular chocolate chip cookies with chick peas (amazing!), and the double chocolate ones (I used a can of black beans for those instead since that is what I had on hand). I made these but forgot to take a picture before we devoured these LoL Came out exactly like in the video. I used my cooled espresso coffee as the liquid instead of my homemade plant based milk (I didn’t have any on hand) and they were delicious. They are soft cookies just the way we like it. Soo good!! I’ve just made a batch of each of these recipes. Easy to make and delicious taste and soft cookie texture. Will put extra in the freezer and see how well they freeze and thaw. That way we can decide if we want some for an after dinner sweet bite or not. We will just pull out what we need for an after dinner treat. The worst that can happen is that they’ll crumble up, and if so, we will just add some crumbles to a serving of our Creami WFPB ice cream. Win/Win! I measured a rounded tablespoon for each and made 2 dozen. Altogether, by doubling this recipe, using the rounded tbls., makes about 48. Merry Christmas 🎄🎁 to you and your family. Be well. 🙏 Quick note: these cookies don't need the added frosting, they are delicious enough on their own., but it's Christmas, so chips or frosting is in order. 😄

Totally get it, thank you! I've been thinking about it and maybe we can make our own chocolate chips, melting chocolate and mixing it with dates that had been processed in a food processor until they are "creamy", then mixing with the chocolate, spreading the mixture in a tray cover with parchment paper, letting set and then brake it into tiny pieces or using a pastry bag, dropping it like little morsels on parchment paper. If this idea is not too crazy and if you have any tips, please share with me, in the meantime I will try this crazy idea and share how does it go later on.😁

Another great line-up of bakery quality (and healthy) goodies. The world needs product lines of healthy vegan food to compete with McDonalds and other "S.A.D." product lines. Now that the economy has gone insane from inflation in the last couple years... and Big Mac combo meals are $18 in some places, it's probably feasible to use the same quality ingredients on this channel to mass produce items like this, and save the kids from a lifetime of chronic disease associated with meat and oil. There are good "vegan" food places but most offer "comfort" food that is deep fried or unhealthy in some other way. There is a tremendous opportunity for the future for those of us that understand the concept. Thanks for taking the time to bring this to us !!
I actually don't use baking powder when making these for myself. If you omit it, the cookies will have a less fluffy texture and may not have a less palatable mouth feel. These things don't bother me, but may be off putting for most people. Great question!

I cannot do chickpeas or cashew butter. I can probably swap out the latter with sunflower butter, but any thoughts on replacing the chickpeas? Perhaps black beans? Quinoa flour?

Just made the chocolate chip version with chickpeas, but without the chocolate chips since I didn't have have sugar free chocolate. These are so good! They are now on my go-to cookie list, and looking forward to trying the navy bean version. Beyond tasking great, being loaded with fiber and super healthy, they come together so quickly. I did the same, except with cashew milk, tahini, and pumpkin seeds! The batter is so good ❤ after baking they are so soft! I was surprised!

This recipe is for soft batch cookies, that's why you had a difficult time getting them crunchy👌🏾

Another great line-up of bakery quality (and healthy) goodies. The world needs product lines of healthy vegan food to compete with McDonalds and other "S.A.D." product lines. Now that the economy has gone insane from inflation in the last couple years... and Big Mac combo meals are $18 in some places, it's probably feasible to use the same quality ingredients on this channel to mass produce items like this, and save the kids from a lifetime of chronic disease associated with meat and oil. There are good "vegan" food places but most offer "comfort" food that is deep fried or unhealthy in some other way. There is a tremendous opportunity for the future for those of us that understand the concept. Thanks for taking the time to bring this to us !!

What happens if you skip the baking soda?
I actually don't use baking powder when making these for myself. If you omit it, the cookies will have a less fluffy texture and may not have a less palatable mouth feel. These things don't bother me, but may be off putting for most people. Great question!
Oh my goodness! I just made the chocolate chips one. I'm definitely making the other two in the future. ❤❤❤ I won't put in baking soda again because you can taste it very slightly.

Let me know You are on to something right here!!! I used to really like the soft batch chocolate chips cookies from Keebler (had to give those up), but a good oatmeal raisin cookie is my go-to. It has been more that 5 years since I have eaten any type of cookie or sweets

My absolute favorite cookie is oatmeal raisin too! I also didn't eat cookies for a long time until I learned to make a healthier version. Beans are easily one of the healthiest foods on the planet, so eating a cookie made from beans is blissful to me!

I did a search and they have them at Whole Foods.
