I cook 10 oz of dry at a time (that's about 9 servings), and I freeze some or most, depending on my needs when I cook them (I usually eat 2-3 servings of chickpeas each week). If your stockpot is big, you can cook a pound at a time. Best wishes.
My whole family is almost as health conscious as I am and I volunteered to bring a bunch of baked yummies to Xmas so this was PERFECT TIMING! :)) I’m also in the throes of seasonal affective so I can’t wait to make a batch for myself for the sad snackies lol

That's because there is too much baking soda. It leaves a bitter taste in the scones I make if I don't reduce it slightly. Reduce it, and add some vanilla. (Just thoughts)

So do you have any idea why, food chemistry-wise, the black beans don't need GF flour, but the chickpeas do? And have you experimented with adding baking powder/soda to get more of a fluffy/risen texture, or would that not work in a mostly-bean dough?

Let's see, 5 tablespoons of sugar = ~ 62 grams. 1/2 cup of Enjoy Life Semi-sweet chocolate chips = 56 grams of sugar for a total 118 grams of sugar divided by 12 cookies. That's about 9.8 grams of sugar per cookie. I'll likely swap out the sugar with dates and use zero sugar chocolate chips but will definitely try this recipe!

Recently got some cassava flour (Manihot esculenta being an indigenous New World species) to try in tortillas, but what I read from the blog I got the recipe from is that cassava is close to wheat flour in performance in baked goods. This cookie recipe might be a good test in addition to the tortilla recipe.

These look great. Just to let people know, there are errors in the written ingredient list for both of the cookies. In the black bean cookie ingredient list, the 1 cup of pb is not listed at all, and the chickpea cookie ingredient list says 5 cups of pb, not 1/2 cup. I think they meant .5 cups. The decimal means a lot..lol

I have made this twice but I keep getting a wetter dough than you do. I thoroughly drained the beans, and even added some peanut butter powder including the regular smooth peanut butter, but still a wet Trish dough. I cannot roll it in my hands.
Sugar is fine in moderation. As long as you don't eat the whole batch in one day/ sitting you'll be fine using sugar. The artifical sweeteners everyone loves so much does far more damage to your body and health.

Organic canned beans often don't contain anything else than water and salt in my country. But I agree, cooking them for dried is always better.
