When I was little I remember my aunt and my mom making cakes like that with all the layers, my uncle used to make this amazing raisin bread and he used to tell me he was up all night with a toothpick puttin the raisins in.

Yum! Buttercream-frosted coconut cake with homemade vanilla ice cream. Most scratch-made cakes are easy to do. We learned to make very successful ones as children. That miniature pickup truck in the thumbnail is adorable. It looks like the dark blue Chevy truck our neighbor had. He was a landscape gardener for Hollywood superstars and, like his beautiful house, it was kept in meticulous condition. I found a wonderful cotton quilt panel with a red Christmas tree pickup truck scene. The artist print will be made into a large, warm lap quilt when the right binding and fleece backing patterns are found.
I remember my mamma making this cake when I was about 20 years old. My daddy found the recipe in a South Carolina newspaper. I'm 62 now. She would keep it in the fridge for 3 days before we could cut a piece and that was so hard to wait. LOL Thank you thank you thank you for sharing this. I recently stopped making cakes, my husband won’t help me eat them, I end up eating the whole thing! Not that my cakes are bad, he’s an ice cream eater...which him & puppy like to share. I would say great “more for me,” but that also means more pant sizes!

I'll use this recipe and alternate layers with mango filling and the sour cream filling. I'll put mango slices & a dusting of coconut on top. I'll make whipping cream for the frosting. It was one of my granddaddy’s favorite and he wasn’t able to eat it after he got older and had trouble with diverticulosis. Growing up, we did the same with warm cake and we had margarine. Butter was fancy. But we sliced our serving of warm cake horizontal, slathered both sides with margarine. SO good!!

This video brought up memories of my mom's Easter Bunny coconut cakes that she decorated for the grandkids. It was a recipe from her coworker who got it from a Better Homes & Gardens magazine in the late 1980s. She baked 2 white cake rounds, leaving one cake round whole for the bunny's face, and placed on a jelly roll pan to serve from. She cut 2 of the outer edges off of the other cake round for ears, cut 2 triangles for a bowtie, and the last cake piece remaining was cut with a biscuit cutter into two rounds for the bunny's puffy cheeks. Whipped icing glues the pieces together, then the entire assembly is all covered in the whipped icing. A generous amount of coconut flakes are tossed over all. Two milk chocolate Hershey kisses are the eyes, 3 inch strips of red licorice are the whiskers set into the puffy cheeks, and colored sprinkles are pressed onto the bowtie--or toss a half cup of coconut in a bowl with a few drops of blue food coloring and a few drops of cold water--to make a solid blue bowtie. Place lots of jelly beans, M&Ms, Skittles, or Reese's Pieces in the spaces on the pan surrounding the Bunny. Thanks, Lori and Danny for sharing your lives with us. The classic frosting is seven minute frosting, which is what I prefer. The whip is good, but it does not stay over time, as you know it will separate. I have to say you are one of my favorites of all time on UA-cam. I watch you everyday on you tube. You are my therapy when I feel down.
We did same thing with our family last Christmas. We have 3 grown children and 5 grandkids so my husband and I did three Christmas runs one to each household. Only thing I cooked three separate Christmas dinners! But it was great! Praying this year shows up better!

I've made this cake for years and it's always a hit! You can also add a small drained can of crushed pineapple to the sour cream filling after taking out the 1 cup for the topping that you mix with cool whip. I use the 2 packages of frozen Tropical Isle Coconut and I don't put it in the filling, but I cover the outside heavy with it. It is also a great make ahead of time cake to freeze.
Oh, I also don't put the coconut in the topping either, I mix the sour cream and cool whip up and put it all over the cake and then put the thawed frozen coconut all over the cake.
I am the only one in my family that likes coconut at all! And I love it, but I will have to enjoy your video cake or have a lot of my own coconut cake packed away in the freezer. It looks wonderful!

One of my earliest food memories is of this cake. I am almost 60 years old now and I still remember eating this cake.

Growing up, we did the same with warm cake and we had margarine. Butter was fancy. But we sliced our serving of warm cake horizontal, slathered both sides with margarine.

Momma use to make her cakes from scratch mom always made homemade banana wafer pudding and my aunt made lots of layered cakes than the family would get together kids hunt eggs men would hunt mushrooms and ladies do the cooking what fond memories of the Easter years

Lori reminds me of the perfect mix between my mom and my Grandma’s personality - and even looks!! They were both very beautiful and amazing women who are no longer here with me. So, that’s one of the several reasons watching Lori cook brings me comfort.

This video brought up memories of my mom's Easter Bunny coconut cakes that she decorated for the grandkids. It was a recipe from her coworker who got it from a Better Homes & Gardens magazine in the late 1980s. She baked 2 white cake rounds, leaving one cake round whole for the bunny's face, and placed on a jelly roll pan to serve from. She cut 2 of the outer edges off of the other cake round for ears, cut 2 triangles for a bowtie, and the last cake piece remaining was cut with a biscuit cutter into two rounds for the bunny's puffy cheeks. Whipped icing glues the pieces together, then the entire assembly is all covered in the whipped icing. A generous amount of coconut flakes are tossed over all. Two milk chocolate Hershey kisses are the eyes, 3 inch strips of red licorice are the whiskers set into the puffy cheeks, and colored sprinkles are pressed onto the bowtie--or toss a half cup of coconut in a bowl with a few drops of blue food coloring and a few drops of cold water--to make a solid blue bowtie. Place lots of jelly beans, M&Ms, Skittles, or Reese's Pieces in the spaces on the pan surrounding the Bunny.

The classic frosting is seven minute frosting, which is what I prefer. The whip is good, but it does not stay over time, as you know it will separate. I have to say you are one of my favorites of all time on UA-cam. I watch you everyday on you tube. You are my therapy when I feel down.

We did same thing with our family last Christmas. We have 3 grown children and 5 grandkids so my husband and I did three Christmas runs one to each household. Only thing I cooked three separate Christmas dinners! But it was great! Praying this year shows up better!

I love coconut cakes with lemon curd or jelly in the filling and the coconut filing all mixed together
I've made this cake for years and it's always a hit! You can also add a small drained can of crushed pineapple to the sour cream filling after taking out the 1 cup for the topping that you mix with cool whip. I use the 2 packages of frozen Tropical Isle Coconut and I don't put it in the filling, but I cover the outside heavy with it. It is also a great make ahead of time cake to freeze.
Oh, I also don't put the coconut in the topping either, I mix the sour cream and cool whip up and put it all over the cake and then put the thawed frozen coconut all over the cake.

At that time I was recovering from a cancer surgery so we thought we’d go see her in March but the world changed and we haven’t been able to go see them. They live in Colorado and we live in New Mexico. But we have to be safe. Take care!
