DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE:
Buttercream Icing
2 STICKS SALTED BUTTER (ROOM TEMP.)
4 1/2 CUPS POWDERED SUGAR
2 TSP. VANILLA
DASH OF SALT
1 1/2 TBSP. CREAM (EVAPORATED MILK)
In a stand mixer’s mixing bowl add butter and mix with whisk attachment on high speed until white and fluffy. Slowly add 2 cups of powdered sugar. Add cream and vanilla. Finish adding powdered sugar. Add a dash of salt.
Coconut Buttercream:
Omit 1/2 stick of butter in the buttercream recipe above. Open can of cream of coconut and pour into a separate bowl. Mix the hard layer of grease on top into the liquid well. Then add 1/2 cup of cream of coconut to the icing. Icing will be thin for using on my fresh coconut cake. If you want to use it to ice a different cake, add powdered sugar to reach the desired icing consistency.

Back in the 1950s and 1960s, my grandmother used to make cakes from scratch. I remember her coconut cakes were a thing of beauty! Thanks for the memories. 😊
Collard the coconut cake look delicious and I like the icing 😋. I love Coconut cake to.,👍🙏😍
My grandmother was from Tennessee and I lived with her when I was a child in the 1950s. She baked a lot of pies, but I only remember her making a cake once a year on my birthday. It was always a coconut cake, made pretty much the way you do, except just butter, no coconut cream in the icing. She always made more icing than she needed, then took the rest of the icing, mixed it with coconut, and rolled it little balls for treats. She always used Baker’s coconut too. This video brings back such memories. I need to try making one myself.
Only 1 word for this cake: YUM! Thanks for showing a shortcut using cake mix.
That looks delish! My Mom had dementia as well. She lived about 8-9 years after we first noticed something was off. She was an awesome cook too. It is sad to watch someone you love disappear little by little. It is like losing them twice. Keep doing these awesome video's and sharing your secrets!
Baker's coconut is absolutely the best to buy.. Our walmart sells Lopez cream of coconut in the row near soda with drink mixer things..This cake looks so very tasty!

My momma made the prettiest coconut cakes. They looked like a big snowball. She used seven minute frosting and put coconut on top and sides. It was so delicious. She passed in 2009 and I haven't got the nerve up to try and make it.😊
@@lorikennedy8508 what's seven minute frosting 🤷🏼♀️ please

Off subject please…but I really need an answer about dried beans/oeas and shelf-life of them …I know I had read somewhere that they would be good for x amount with word years mentioned … I have mine in glass containers with good lids…read the other day though it’s saying in months🤦🏼♀️ this was aside from freezing them etc or something don’t remember all of it.. 👍🏻😁appreciate your help on this Tammy … you really helped me about not having to wash them‼️‼️👍🏻😁 really don’t want to throw these away 🤦🏼♀️
Well I would say about a year. And you should wash them if they are a Wal-Mart or store brand because they really do have dirt on them lol.
Cream of coconut at my Walmart is with the alcohol drink mixers. Looks delicious 😋

Hey Tammy, do you what's been happening with Bird's eye frozen coconut...I can't find it anywhere
It is not made anymore. Some grocery's still have their own brand but it is hard to find.
@@CollardValleyCooks Thanks Tammy
I always use whipping cream in my frostings..........also 1/2 butter and 1/2 Crisco shortening.....yes cream of coconut should be more solid... That mixer is poor, center never gets in the beaters, wish you would use your Kitchen Aid. BEAUTIFUL!
I'm on my way with the coffee.
Looks delish!
Love and Blessings from Eastern Kentucky
Send me a slice in the mail, 😊😊
Yum! Beautiful cake, Tammy!🥰
Beautiful cake! Yum
Watching from Illinois, and would love to see the pina colada layered coconut cake recipe too. This one looks gorgeous!
Well he was a part of the hold thing just watch
Beautiful cake Tammy, that's one of my favorite cakes. Did you say a 9x13 pan would work? Thanks😊
Yes I did
For me, finding the canned coconut cream is easy, it’s the bag of Baker’s Coconut that’s the hard part!
Hi Ms. Tammy how do you keep a cake layer from having a dome? I notice yours were flat. Thank you Lori from Yulee😊
I slam the pans on the counter to eliminate the air or I trim them with a knife if necessary
I loved coconut cake look
Delicious. Love Joanne Resh ❤️
Beautiful cake but we like our coconut cake made in a 9x13 we don't like tears cake . Tks for your recipe though . 😊
Thank you for sharing
Looks like
❤ 😋 yummy
A delicious cake
Love coconut cake, cream pie, anything.
I’ve purchased that brand of coconut cream from the Dollar Tree. I’m not saying they always have it and I haven’t been to the $ store in a while, but I’ve purchased it there a few times. Decent size can, but not as large as the one you used.
I have to use homemade fabric cloths around my cake pans to keep em from puffing up... But, I rarely make 3 layers so maybe 3 would be better.
? I don't understand.
@@susanjane2498 they are called, 'bake even cloth strips..... You wet them and wrap around outside of pans... The moisture keeps the outside of the cake from getting done quicker than the middle, thus having rounded layers. I made my first ones from wetting paper towels and then wrapping them in aluminum foil and wrapping the foil around the sides of the pans. Actually they work better than the fabric strips you can buy cuz they tend to loosen and not stay in good contact. I used mine multiple times.
Looks yummy! I love coconut cake! I love coconut anything
Beautiful cake!
Indiana here. I'm sorry that I'm late.
My Mom used to make this So yummy 😋 Blessings 🙏❤️
Watching from Indiana
Yummy yum. My granny made this from scratch. Love your hair like that Tammy. I used to grate the fresh coconut for my granny. Love this cake.
Beautiful coconut cake it's one of my favorites 😋 I love watching your videos 😊 Where did you buy the large jars you have your flour and other things in and the smaller jar you have your spices in and do they come with the lables?
They are on collardvalleycooks.com
Yummy. Thanks.
I don't comment very often, but this cake! Wow! I want some
Cream of coconut cake. Drooling. Was the cherry chip cake big in the Carolinas too?
This Gen Xer like using the cuppa method making box cake mix. Cuppa whole milk. Cuppa mayonnaise. One box of pudding and a box of Dream Whip. I didn't get big eating bad food, every pound was delicious.
Beautiful Cake.
You have got some skills right there! Yummy. Yes please, I'll have a slice.
Awesome!
I just love when you make cakes…it’s definitely your forte. Thanks Tammy ❤️😊✌️
Fresh coconut cake was my Daddy's favorite cake and my Mother made them for him often from scratch. Tammy, in your cookbook on the icing page, did I see you list Piña colada icing as Penna Colada? Did you mean to spell it like that instead of Piña colada?
