My grandma’s birthday was on Christmas Day. Over the course of 10 years she had 5 strokes and her health and memory declined. The last few years of her life I made her this coconut cake for her birthday. It was her favorite dessert and this recipe in particular she loved the most. Her last Christmas with us, she had the most coherent day she had had in years. We enjoyed this cake and she told us stories of her and my grandfather. She also kept telling me repeatedly how amazing this cake was. I’m rambling, but I have such fond memories of this cake and times with my grandmother. She looked forward to it every year!

That's such a pretty coconut cake and I love how you decorated it with the holly and the holly berries. My Granny used to make a seven layer coconut cake every Christmas. She would put cherries on top of it . She would set it in her formal dining room and she'd have her dining room table all fixed up for Christmas. She would 1st lay a red tablecloth on her dining room table and then she'd drape it with a white lacy dining room tablecloth . Then she would put all of her Christmas desserts out on the table, but the Coconut cake was the star of that table. lol !! 😉 I miss that so much !! Paula is so REAL. Her videos are better than television. You can replay them anytime. The “Lady” has aged well ( hate to use the word aged ). Coconut cake is one of my mothers special cakes made on the first of January. Mama use to shred the coconut by hand. Then our grocer started carrying bagged coconut. The passing of time has made things easier. The Holly sure did brighten the cake up a lot. Great idea.

I'm in rural Md. Ive had holly in my yards prior to moving here. There is a bizarre holly on the side of my house that is so bold & spiky it has bark on the base. The thing has yellow weird flowers on top. It's at least 6 feet tall & 3 feet wide. It's a BEAST! Luckily I can avoid it but boy if you try to work around it I swear it'll stab you! It's like something out of a horror movie! Point being - if you have them you sure can't let them go rouge or they turn on you!😂

I LOVED watching this! My mother makes this cake for my birthday every year, and it is DELICIOUS!!! But my favorite part was the cutting of the cake. My materanl grandmother cut her cakes the same way Ms. Paula does, but my paternal grandmother always cut hers in wedges...the number of wedges was based on the number of people at the meal. My mother tells a precious story of the first time she had cake at my Daddy's house. It was his birthday, and when my grandmother cut the cake, my mother almost died. She said she had never been served such a large piece of cake in her life, and she didn't know how in the world she was going to eat it all, but she didn't want to offend my grandmother. Fortunately, my grandfather came to her rescue, and finished her piece of cake for her. 😅

How yummy! Used to make Baker's Coconut cutout cakes as a teen baker. I would have dyed icing green and coconut red for holiday and made this if I had a few to feed. Love coconut and Paula!
We make this cake with a few changes. We use as our cake base Duncan Hines yellow cake mix with a few changes. The filling is1 cup of sugar, 8 oz sour cream and coconut refrigerated. Other than that the cake is the same. Everyone raves.

We would then decorate the top with green and red maraschino cherries 🍒. It was divine, and I don’t even LIKE coconut but I loved that cake.
This is my favorite cake. The wait is torture. On rainy days (day 3 can't wait 4 days), I will make a icing with cream cheese, cool whip, condensed milk, or cream of coconut. i always use the 7 minute icing on my coconut cake. My grand daughter called the other day and wanted me to make her oldest son a coconut cakefor his birthday. I made a butter cake and I used toothpicks to anchor the cake from sliding off. My mother always used the 7 minute icing as long as I remember. I hope you and your family have a wonderful week.
My Mom made the best. Paula I haven’t had one,like hers in 15 years. People have tried, but cant get the consistency right on 7 minute icing. My Mom would say its threading a needle, when holding up. I agree! But my husband hates coconut, which is just so unacceptable!! I wish I could force him to eat it just once. I bet he just had a bad coconut experience as a child. But you can't really sneak someone a piece of coconut cake, can you? I'm open to suggestions! LOL
That is pretty much the recipe my mother used back in the 1950s. But she did the grated coconut from real coconuts. It was a laborious process … I'll be using store bought!
My favorite cake is the fresh coconut cake. My grandmother made it every year at Christmas and then my mother did. I have made it but it has been years. The cake had coconut milk in it and the frosting was the divinity icing with coconut on top. Not only did she make it at Christmas but she made it for my mother’s and my birthday which is January 19. The birthday cake also had one pink layer.

I had forgotten about this. I made this cake for a friend of mine years ago.. i'll guess early 2000's i saw it on a show when you made it special for your son's birthday. My friend wanted a tie dyed cake for her birthday... i had sheets of wax paper all over my counter using food coloring to dye the coconut and spreading it to dry. Then "tie dyed" the cake. It was the first cake i ever made from scratch. Soooo easy, sooooo delicious.. and it basically is self decorating... perfect for the baking challenged like me! So glad i found this recipe again!
Oh Paula, I bought that cookbook (& all of them) and have made it countless times. Love it and so does my family, one of my favorites! I do use coconut milk.
Merry Christmas 7 minute icing is very old fashioned but I believe it is the best. I’ve also made a cooked fudge icing. There is also a brown sugar cooked icing

I made this cake from your cookbook when I lived in AZ, after I saw you on television. The cake was a bit heavy/weighty, but dang was it good! Yuuuumy.
My husbands aunt makes this a lot and we get to partake in it. She will make it and bring to my in laws, and they are polite enough to share with me. She will put the 7min icing between the layers. Oh my goodness!!! It’s so good!

I make a coconut cake at Christmas using cake flour and I separate the eggs. I have found the crumb of the cake is always beautiful when I beat the the egg whites and fold them in at the end. I use two coconuts and my husband opens, “peels” and grates and coconuts. My filling is made with the milk from the coconuts and the coconut and I cook it on the stove. I use 7-minute icing and put coconut all around❤️ You have made me hungry❣️
We make this cake at Easter because of the three days wait. It reminds us death and Jesus rising on the 3rd day. Thanks for reminding me of this cake 🎂

i always use the 7 minute icing on my coconut cake. My grand daughter called the other day and wanted me to make her oldest son a coconut cakefor his birthday. I made a butter cake and I used toothpicks to anchor the cake from sliding off. My mother always used the 7 minute icing as long as I remember. I hope you and your family have a wonderful week.

Did you let it set in the refrigerator 3 days? Just curious if it is worth doing that. I'm assuming it makes it more moist. Thank you.

My Mom made the best. Paula I haven’t had one,like hers in 15 years. People have tried, but cant get the consistency right on 7 minute icing. My Mom would say its threading a needle, when holding up. She did it with the icing between the layers. I was drooling watching you. Im 62 and never could do this cake. Thank you.

I agree! But my husband hates coconut, which is just so unacceptable!! I wish I could force him to eat it just once. I bet he just had a bad coconut experience as a child. But you can't really sneak someone a piece of coconut cake, can you? I'm open to suggestions! LOL

That is pretty much the recipe my mother used back in the 1950s. But she did the grated coconut from real coconuts. It was a laborious process … I'll be using store bought!
My mother used to make a coconut cake called Lady Baltimore. It was delicious.

My favorite cake is the fresh coconut cake. My grandmother made it every year at Christmas and then my mother did. I have made it but it has been years. The cake had coconut milk in it and the frosting was the divinity icing with coconut on top. Not only did she make it at Christmas but she made it for my mother’s and my birthday which is January 19. The birthday cake also had one pink layer.

I had forgotten about this. I made this cake for a friend of mine years ago.. i'll guess early 2000's i saw it on a show when you made it special for your son's birthday. My friend wanted a tie dyed cake for her birthday... i had sheets of wax paper all over my counter using food coloring to dye the coconut and spreading it to dry. Then "tie dyed" the cake. It was the first cake i ever made from scratch. Soooo easy, sooooo delicious.. and it basically is self decorating... perfect for the baking challenged like me! So glad i found this recipe again!

Merry Christmas 7 minute icing is very old fashioned but I believe it is the best. I’ve also made a cooked fudge icing. There is also a brown sugar cooked icing

My husbands aunt makes this a lot and we get to partake in it. She will make it and bring to my in laws, and they are polite enough to share with me. She will put the 7min icing between the layers. Oh my goodness!!! It’s so good!
Yes, it needed icing between the layers, when it was cut it looked bad, like something was missing,,,,,,

I made this cake for Easter and it’s delicious! Make it!!!!
I make a coconut cake at Christmas using cake flour and I separate the eggs. I have found the crumb of the cake is always beautiful when I beat the the egg whites and fold them in at the end. I use two coconuts and my husband opens, “peels” and grates and coconuts. My filling is made with the milk from the coconuts and the coconut and I cook it on the stove. I use 7-minute icing and put coconut all around❤️ You have made me hungry❣️

If you use skewers instead of toothpicks you don't have to worry about losing toothpicks in the cake. They are much easier to anchor the layers with.
