INGREDIENTS
cooking oil to brown meat
4 lbs (1.81 kg) beef chuck roast meat
1 tsp salt
1/2 tsp black pepper
1/2 small onion
1 cup (236.5 ml) water for the pan
3 extra cups (710 ml) of water for Instant Pot
**CHILE PUREE
1 chipotle chile in adobo sauce
6 guajillo chiles
1 ancho chile
1 pasilla chile (add 1 cup water to the blender for puree)
1 chipotle chile in adobo sauce
2 1/2 cups (591 ml) water (for boiling and soaking chiles)
2 Tbsp (20 g) beef bouillon powder
2 tsp Mexican oregano
1 tsp dried thyme
1/8 tsp (adjust to your preference)
1/8 tsp (adjust to your preference)
2 bay leaves
6 cloves garlic

I have tried other birria recipes but I could never get it to taste right it just seemed like it was always missing something. This recipe was simple and it came out with so much flavor. Like you said I could almost drink the broth ❤ I followed the way you made the salsa and that also came out over the top delicious. I've made salsa many times before but for some reason this way is amazing 😻

Looks good, but I've honestly just recently discovered Sam's Club of all places, has a pretty decent kit for about $13. Seasoned correctly, it's bomb! Enough meat for about 16-18 Birria Tacos. It's not a bad deal honestly and the only thing you do it boil the stew for 5 minutes and let it simmer for 45 minutes. I'm sure you could increase that time with a pressure cooker, but I haven't needed one for anything I've cooked yet. Will give your recipe a try when I feel like going through all the extra cooking motions, lol.

I have used this recipe so many times now. I brown my beef and onions on the stove and then cook for ~3 hours in my crockpot. Your recipes are the best!!! We grew up in very different worlds but I did get the wonderful opportunity to live in South Texas for a few years and love the area and food so much! Girl, let me tell you. I cook all foods... from all over the world (Thank God for the Internet). I saw my husband walk in after work and snarl his face up when he saw we were having tacos. But is taco Tuesday. I ignored him and continued to make his plate. While I was making my plate... he wanted MORE! Really???? I made him more before I even fixed my plate. He said, "They are the best tacos I've ever had. He even ate the beans and rice. Making them again on Wednesday... my neighbor, who I shared some with wants to learn to make them for her husband!

I tried this recipe but used a Boston butt since our family prefers pork over beef. It was absolutely delicious…..my family fell in love with this dish. However I could not get my tortillas to fry crispy. I used flour tortillas the first time because I didn’t have corn. I thought that was the problem so I bought corn tortillas and they didn’t fry crispy. Any idea as to what I’m doing wrong? I cooked an 8 pound butt and we were able to have 3 family meals from it. After we ate all the meat I used the remaining sauce\broth for yet another meal. I cooked ramen noodles and added to the heated broth and it was amazing. I did not use the season packet which was with the ramen.
Could this be made in a slow cooker?
Can you still make this in a regular pot if you don't have a pressure cooker? Will the water measurements still be the same?
I'd say double the amount of water, unless it's a crock pot. Only because you have a lot more evaporation. Asks increase the amount of salt to 1/2 tsp because a pressure cooker will open up the protein fibers so the meat actually absorbs more flavors and salt than on the stove top.

You don’t have to use a pressure cooker. A slow cooker does a great job.

You can actually make the tacos without the cheese or add the meat to ramen or just eat the meat with the broth like a stew 😊
Everytime I heard birria was on the menu in my familys' mexican fiestas, I would pass because they were always made from goat meat. Goat meat has a game-y flavor which i do not care for. I've tried the beef version...and it is sooo much better. For me, at least. I'll be testing this for sure!!
