Last time I made this I fried one side of the tortilla, then took it out of the pan, put down a layer of cheese directly on the pan in the exact size and shape of the tortilla, then put the tortilla (un fried side down) and rested it in that cheese. From there fill the taco as normal. By the time you're done you've got a nice crispy taco that has a layer of fried cheese on the outside. It was incredible.

We make these probably once or twice a week. I always make a big pot of consome when making them, the sauce freezes really well. So when you want to eat it again, just slowly roast your beef and defrost your sauce, and let everything simmer together. Homemade tortillas are a must in my family.

DO NOT USE THE Bullet blender to mix hot liquids, the liquid expands as it’s being mixed causing pressure to build in the sealed cup and it can explode!! Look it up.. the tacos look fantastic, another great recipe

Do another video making the Birria, but used beef cheek instead. The collagen in the cheek gives it an amazing mouth feel and the meat is much more tender. If you want even more flavor, smoke the cheeks a little before throwing them in the pressure cooker.

As delicious as that look, that was a hell of a lot of salt at the beginning and I know there’s more salt coming with the other seasonings.

I thought Birria was a name for the lamb used, not the sauce. How can you make lamb tacos with no lamb, that does not compute.
Birria does not translate to “lamb” in Spanish…. birria translates to “worthless” and it was referenced to goat meat being disliked for having a gamey flavor… maybe research before you criticize

serious question: what's with the vegan hat? obviously not everyone will have the same philosophy about animal welfare and environment protection but the hat is an insecure look. like you're feeling attacked when vegans are probably not even watching these videos. that preemptive defense is a bit cringe for someone w a confident name like Mr. Make It Happen.
i do enjoy the videos, high quality and perfect explanations as always, but i haven't seen the hat before so my feedback is just that it seems like you're bothered by a non-issue which is off-brand to the laid back cool chef i know.. 😅
Seems like you’re the one with the issue.. the hat was a gift and I think it’s hilarious.. if someone’s offended by a hat that simply says “I will never join you”.. they’re the ones that are insecure.
