  • What I eat in a day back to basics part 3 is what I will be sharing with you today. 3 more quick and easy recipes to help you get back to basics on the starch solution. Recipes as follows:
    BANANA PANCAKES WITH SPARKLING WATER
    INGREDIENTS
    ONE SMALL BANANA
    1 1/4 CUP OAT FLOUR
    1/2 TSP SALT
    2 TSP BAKING POWDER
    2 T UNSWEETENED APPLESAUCE
    1 TSP VANILLA
    1 1/4 CUP SPARLING WATER
    INSTRUCTIONS
    Add banana to bowl and mash
    Add the rest of the ingredients and mix well. Add the sparkling water last.
    cook on a non stick griddle or skillet a couple of minutes on each side. I used a 1/4 measuring cup to pour the pancakes. Cook for a couple of minutes on each side, serve with maple syrup and fruit.
    Makes about 10 pancakes.
    EASY MAC N CHEESE WITH VEGGIES
    INGREDIENTS
    1 cup gluten free elbow macaroni
    1 cup plant based cheese sauce
    1/2 cup each or more of sliced black olives, halved cherry tomatoes, red onions.
    2 handfuls of super greens or greens of your choice chopped
    salt and pepper to taste
    Nutritional yeast to taste
    INSTRUCTIONS
    Cook pasta to package directions drain. Add cheese sauce to hot pot and then add in the pasta and mix well. If you need to add more cheese sauce this is the time.
    Add in all the veggies, salt and pepper and nutritional yeast mix well. Serve with a side of steamed broccoli and sprinkle nutritional yeast over the top.
    makes 3-4 servings
    CHICKPEA FLATBREAD
    INGREDIENTS
    1 1/2 cup chickpea flour
    1/2 tsp salt
    1 cup warm water
    2 T unsweetened apple sauce
    2 large handfuls arugula
    1/2 cup sliced red onion
    1/4 cup oil free hummus
    1/2 cup artichoke hearts
    3-2-1- dressing
    INSTRUCTIONS
    Mix together the flour and salt, then add water and mix well till smooth.
    Pour mixture onto a lined 9 x 12 baking sheet and spread out to an even layer and place in a preheated 450 degree oven for 15 to 20 minutes until lightly brown and cooked through.
    While flat bread bakes, place the arugula, red onion and artichokes into a large bowl and add 2 to 3 T of 3-2-1- dressing and mix well. When the flat bread is done let it cool for a few minutes and then add the hummus and spread over the entire flat bead and top with the arugula mixture.

    Your Back to Basics series is so great because you make it all seem very do-able. I remember how overwhelming it was to switch to wfph eating/cooking,. Wish I had known then that I could make simple recipes, eat simply and have success. Also, love your inspiring words and how you called this way of eating a life-long journey! So true!

    Hi again, I have got another thing I do with parchment to make life easier and that is crumple it under a running tap and it changed it for me really well. Got this from watching Jamie Oliver. Don't know if he's known where you are but he's well worth watching and making his recipes vegan 😃

    I made the pancakes this morning and we loved them. 👍 I made a fruit sauce to go on them. I blended one banana, some strawberries, a peach, a bit of maple syrup and the little bit of sparkling water that was left in the can. Together they were delicious. Thanks so much Debbie! 🥰

    By the way, if you add a bit of the cooking water from the (non glutenfree) pasta it binds even better and the cheese sauce becomes even creamier. The Debbie for your great receipes!

    Nothing beats white rice for me for dinner. Fruit for breakfast and lunch with sugar. I feel so good and lean. Been doing high carber since 2001.

    Looks good...does the flat bread fall apart as you eat it? Looks like it will even though it didnt when you took a bite. Love your videos.

      If you don't cook it long enough it will. Just make sure the bottom gets a bit crispy and you should be fine. So glad you are loving my videos, I appreciate it💚

    I can’t eat pasta. Every time I consume simple carbohydrates I do gain weight. Looks delicious

      I can't eat a lot of pasta either but you can definitely eat it once every couple months. That is what I do . You won't gain any weight that way and still be able to enjoy pasta once in awhile.

      You can use any kind you would like, as long as it has bubbles. I actually used a sparkling seltzer unflavored of course.💚

    What I’m your opinion can replace nutrition yeast?

      If you don't care for the taste of nutritional yeast then leave it out. The recipe will still taste great. Or you could try adding some dried mushrooms or a little soy sauce but really it's optional.

      Awesome for the soy sauce or mushroom. I love nutrition yeast but my body get wear reaction to it. In great ideas from you. Lol who would know that sweetened apple sauce is replacement to oil. Thank you. I love it. 💎
