Easy Meal Prep For Maximum Weight Loss /WFPB/Starch Solution

  • Easy meal prep for maximum weight loss that is WFPB and follows the starch solution guide lines is what I will be sharing with you today. Meal prep doesn't have to be overwhelming, complicated or take hours in the kitchen. I meal prep every week consistently. This has been one of the keys to keeping my 15 pound weight loss off for almost 2 years.
    I love to make oatmeal for the week.
    Start with 5 cups water and bring to a bowl. Add 2.5 cups of oatmeal, 1 T ground golden flax seed1 T cinnamon 1.5 cups shredded zucchini, 1.5 cups riced cauliflower. Stir and bring to a boil then simmer for 15 to 20 minutes. Divided into 6 containers adding blueberries and sliced bananas to each. Let cool completely before putting into the fridge.
    I also love to roast veggies and make rice.
    To make my rice add 1 cup brown rice and 1/2 cup white rice and 3 cups water to a rice cooker. Press start and then work on veggies
    I love to roast potatoes, butternut squash, zucchini, yellow squash, red onion, red pepper and brussels sprouts, and chick peas.
    I usually roast the potatoes, chick peas and butter nut squash first. Cut all your veggies to be about the same size. Place on 2 cookie sheets and season with your favorite seasoning. I used garlic powder, onion powder, smoked paprika and oregano. Roast in a 425 degree preheated oven for 15-20 minutes. I also like to bake russets and sweet potatoes at the same time. I just place them next to the cookie sheets right on the rack. While those are cooking chop up the rest of your veggies place in a bowl and season. When timer goes off pull out the trays and add the rest of the veggies and cook for another 15- 20 minutes or until done. Keep a close eye on them towards the end. They can burn. When rice and veggies are done. divided the veggies into 6 containers and add a couple scoops of rice to each. Drizzle on some plant based cheese sauce, BBQ sauce, soy sauce, coconut aminos, sweet chili sauce or whatever sauce you want. Let cool completely before putting in fridge. Add fruit and a salad (I like to make mine fresh daily but you could definitely make a big salad and divide into individual containers)and you are complete for the week.

    Not sure why but your video popped up on my phones notification. I am not vegan nor do I look up vegan stuff but I love this video. Great meal prep. I think UA-cam was reading my mind about cutting back on meat protein. Going to try out some of this next weekend when I'm at the store.

    I diced an apple and cooked it with my oatmeal along with apple pie spice. It was yummy. I'm giving the zucchini and riced cauliflower addition a try next time.

      Sometimes I add pumpkin pie spice to my oatmeal instead of cinnamon. In India they make savory oats with curry blends. I like it better sweet

    I make oatmeal with almond milk, Bob’s Red Mill High Fiber Oat Bran (7 grams each of protein and fiber), chia seeds, a Tbs of pb (peanuts and salt only), one smooshed ripe banana, cinnamon and nutmeg. It is so good, and filling! I can add defrosted wild blueberries (tiny) or other fruit as well. Never considered adding cauliflower or zucchini to oatmeal.

    One tip: I suggest glass containers to avoid toxicity from plastic leaching into the food, especially because you’re putting hot food into the containers, and heating in microwave. I got a whole set of borosilicate glass food containers on Amazon.

      I have tons of glass storage containers, but I prefer the plastic for my lunch bag, they are much lighter in my bag The ones I get are BPA free, so I'm not too worried about. Thank you for your comment and sharing your tip.

    What a great video, I love the idea of adding in some hidden veggies to the oatmeal. Another time saver for me is if I’m cooking lentils with my meal I like to add them to the rice cooker. I do the same with red lentils and pasta.

    I love your meal prep idea. I eat the same lunch but prep it the night before or in the morning. It is good to know you can make it for the entire week and it still tastes good! Will definitely try. .

      Absolutely!! I use to do three days worth of lunch prep and it was good Then I tried 5 and it was still good. At least for me it works great.

    Great idea with adding veggies in oatmeal just an fyi on ground flax seeds once they’re ground they are very delicate and nutrients fade away quickly. Best to stir them in after cooking to save potency of micronutrients.🙂

    Japanese add veggies to rice in rice cooker like tiny shreds of carrot, thin sliced mushroom, thin shreds of zucchini. It cooks well in the rice.

    Hi! So you eat this way for breakfast and lunch, when it comes to dinner do you find yourself making different things each night for dinner? Or can you also stick to one meal for a few days? And I was curious how your husband eats also. Thank you so much!!

      I usually have the same for dinner, a starch and non starchy veggies, maybe some beans. I keep it pretty simple. My husband is about 70% plant based. I'm still working on him 😂. He is very supportive of the way I eat and my you tube channel. He knows the benefits of a plant based diet but just isn't there yet, and that is okay. We all get there in our own time.

Winter is coming and I'm not going to invest in an instant pot at this time however I do have a slow cooker and would love to use it. I'll just leave that creativity to you though! I look forward to seeing a video or two with some recipes for the slow cooker!!

      I love it, I've had it for almost 30 years. It is a Westinghouse. I don't think they make them any more. You don't need an expensive one, just get a basic model.
