Sarah, first I want to say how sorry I am for the loss of your friend. Praying for everyone who feels the pain of her passing.
2nd, I agree with Solo. Down south we dont even chop the greens, we rip them from the stem in the middle. Then I put them in the crockpot with smoked turkey legs.

My Dad used to rip thru the stem rather than cut them too. really my father never really concentrated on using the collard green he would do the mixture of the mustard green with the turnip greens or mustard collards and kale. Or mustard greens, turnip greens and cabbage.. that would give that green a softer taste. in fact, as kids, we would be with him sort of shucking those greens on Saturday night and he would cook them up so they're ready for Sunday. He would use salt pepper maybe a little bit of cayenne and he would use turkey necks rather than the wing. Boy oh boy that is just plain delicious! all of my friends loved it all and my family members would eat it all up and we would have those greens from Sunday all the way through Wednesday. Those were all weekly mainstays. he would always joke and say to us "Eat your greens so that your hair will grow long and strong'" then he would say "Eat your string beans so your hair would be curly!" Well I ate both so my hair is thick long and curly lol. as I was his sous chef since I was 10 years old, I know how to do these things that he used to do. People used to tell us that we should package them and market them and sell them to the supermarkets in bulk. That's his legacy that I'm passing on. Love you family!🌹#Bobschile #goodeats

Tho in the Northern Hemisphere it’s not really soup weather, here Down Under 🇦🇺 it’s winter and I just used my sweet potatoes to make a Thai Sweet Potato soup 👍 it’s easy and yummy!
    - sauté diced onion, crushed garlic, crushed ginger until translucent
    - stir in red curry paste to taste
    - add 3 cups of vegetable stock and stir well
    - add cubed sweet potato (2-3 cups)
    - bring to the boil before reducing heat and allowing to simmer until sweet potato is cooked thru then remove from heat
    - use a stick blender to blitz mixture
    - stir through a can of coconut milk and return to heat until soup comes back up to desired serving temperature
    - serve with a big old dollop of coriander pesto 👍
I love your meal prep videos 🤟 stay safe and well xx

Initially, when trying to stir in a large volume of greens, using tongs to stir (before the greens are wilted down) is helpful. I use tongs to mix coleslaw as well.👍

My bf cuts collard greens but in quarters... Also he uses the flowers from squash plants and we use it as a soup. Tastes delicious with butter, salt, pepper, and orange or mandarin pieces.

We peel and dice the sweet potatoes and bake them with avocado oil and chili lime spice from Trader Joe's. We eat them as a side or in salads, budda bowls and even for breakfast with a fried egg on top so delicious.

You should get one of those veggie slicers that you just half the onion and push the top down and it chops it in pieces. The ones advertised on TV 🤣 that way Belle can cut and cook with onions!

Hi Sarah! Thought I’d let you know that I found pasta called “small shells” and they’re perfect for my baby who is...well one on Monday actually. 😮 Where does the time go!?! Anyway, I got the shells through Walmart delivery so your Walmart probably carries them too. We don’t have to cut them up for him or anything. Have a great Saturday. Sorry to hear about the loss of your friend at church. 💗

I like to roast sweet potatoes, beets, carrots, onions, zucchini, and summer squash (in a small dice) seasoned with salt, pepper, garlic powder, turmeric, and paprika. Then I serve it over quinoa or rice with fresh avocado and lime juice. You could also add grilled chicken, shrimp, or steak. It’s a great, healthy summertime dinner

Solo, you are a great cook. I tasted my first Kale just 2 years ago. It was delicious. I love watching your family cook, I am not a clean cook at 75 years old. I do good to stand and cook . I can't do anything else. By then my body hurts so badly all I could do was sit down and eat. My son who is a fanatic about cooking, and cleanliness, came in and started complaining about how messy I was;.

My grandmother from Mississippi chops her greens thinly. I’ve never seen another southern cook do the same. I like roasting sweet potatoes with a bit of cumin and maple syrup and adding it to salads. It may go well with your greens!

Never had greens fixed this way, but they looked delicious! Baked sweet potatoes/ butter and homemade cornbread would be good with greens. Most of us in the southern USA (Alabama) have to have unsweetened, homemade cornbread with greens.

Made Solo’s sukuma wiki recipe for my family with coconut milk instead of sour cream because I can’t have dairy with my current nursling and we all loved it! We don’t cook with a lot of collards normally so I was excited for this recipe! Thanks for the meal inspiration! ❤️

For the sweet potatoes! I love cutting them into cubes and roasting them with some oil and seasoning on them (plus any other roast veg I have like potato, carrot, parsnip etc) and then once they’re cold make them into a salad. So just add the cubes in with whatever greens you have, usually some red onion, a bit of cheese and whatever else I feel like (like nuts, seeds, quinoa, couscous), super easy way to have them in summer!

I know you just bought a cow and have a lot of ground beef, but sweet potatoes make for great vegetarian tacos! Cube them into bite-sized pieces (you don't even have to peel them!), lightly coat with oil and taco seasoning, and oven-roast at 425 until tender. I finish mine with a tiny drizzle of honey and a lot of lime juice. Then build your taco as usual!

On sweet potatoe cube bite size season and grill or oven cook them. Put in container and put in fridge. Throw small handful on salad so good. Can do some without season and because they are chilled baby can have. Chilled helps while teething plus soft so good for baby.

I did a variation on the Sukuma wiki but it’s so good. We don’t have collard greens so I used cabbage and kale instead and I used veggie mince (as I’m vegan). Served with couscous and it turned out amazing. :) Thanks for the great recipe idea. I’m looking for things that are quick and easy to make but still have a lot of veggies and this one was really good. Thanks Sarah and Solo 😃

Next time you don't know what to do with sweet potatoes, try cutting them up in chunks, frying them off with chunks of kielbasa, onions, and bell peppers or snack peppers. It is super fast, simple, and delicious. You don't even have to add any oil to fry them in when you start it all off with the kielbasa.
