I just made your recipe last night for the first time...TRULY the BEST apple pie I have ever made!!! partially cooking the apples first before adding them to the crust was game changing!!! THANKS!!!......quick question...what is the purpose of placing the pie in the freezer fro 20 minutes prior tp baking?

    • @marieskitchen

Hi! This is so great to hear! 🎉 Thank you for taking time to let me know 🥰 It is REALLY helpful to know that other people are getting good results because then it means I’ve done a good job explaining everything in the video and written recipe. I’m always a little nervous when I put a new video up, so I’ll sleep better tonight thanks to you 😴☺️💖.
The 20 minutes of freezer time is to ensure that the pie crust (specifically the butter) is very cold. A crust with cold butter holds its shape better than a crust with warm butter. So you’re more likely to have nice, thick edges that stay in place while baking if your butter is cold. Let me know if you need anything else and thanks again ❤️, Marie

How sweet, Marie starts off with a statement about how this pie is "...not perfect", that that's not what she's going for and then, bless her heart, proceeds to make the most beautiful, perfect apple pie I've ever seen-and, at 74 y.o., I've been making pies for a lot of years. Thank you so much for such a wonderful, "not perfect", pie recipe Marie : )

As a 55=year long chef, I can say that I really like your down-to-earth realistic approach to cheffing. Nothing is ever perfect, and neither is anyone for that matter. Therefore, nothing we make is perfect, which is just perfect! It's okay. Just do your best and most of the time you'll produce the most wonderful and marvelous dishes of true scrumptiousness!

Hi Lisa! Thanks so much for watching and for the note 🥰 I’m glad the videos have been helpful. I just try to remember than no one cares about the appearance as long as it tastes good 😁 I also think of pies and cakes as a sort of art, and we certainly don’t judge art as being perfect or not. Think of Picasso or Jackson Pollack! There is beauty and humanity in the strange mess of it all. Let’s do more of that together. Big hugs and so glad to be connected ❤️, Marie

I have tried for over 20 years to make an edible crust, without success. Maria’s tutorial on a single pie crust and this Apple pie video gave me the tools to dare another try. Using a food processor, the plastic wrap twist and the recipe itself is PURE GENIUS. I made the most delectable, flakey, delicate crust for an apple pie that is as close to heaven as I can get. Me, my family and our tastebuds will be forever in your debt. I advise the best way is to make the crust ahead and do not bother with wax paper to roll it. The perfection of the recipe permits you to roll it out in just a few minutes. #GodBless

I once made an apple pie with only three good size apples. The first time my father came to see me in my apartment in another city I served him a slice of apple pie. He said it was the best pie he’s ever had and not to change a thing. Start with Macintosh apples they are always soft and a beautiful flavor. 1/2 cup sugar
    1/4 cup honey
    Dots of butter
    Cinnamon
    Tapioca
Beautiful pie you just made xo❤

Dear Marie, I made the most beautiful pies I have ever made thanks to you. I made an Apple pie with your recipe. Made the lattes and painted leaves on the side. I also made a pumpkin pie with the painted leaves and made three pumpkins from the leftover crust. Oh my goodness they came out so beautiful. I wish I could show them to you! How can I send you a picture of them? Thank you so so much!

Loved your painted leaves! I also love your videos. I have made apple pie for a long time but I always pick up pointers when I watch any of your videos. You have a very calm manner about doing it and I always have to remind myself that it is in a race to put a pie together. I can’t understand why anyone wouldn’t watch all of your video. Thank you so much and keep posting I’m going to try the vanilla in my pie this weekend. I do live in New England but I’ll still try painting the leaves on the pie.

I watched the entire video as for some reason it popped up on my feed. My family and friends consider me as their Apple Pie Queen and they frequently request that I bring one to every gathering! I was delighted to see that your recipe and mine are nearly identical! I don’t cook down the apples though. I just mix up the dry ingredients, but double the amount of flour, toss the apples in the mixture, dump them into the crust, then
I drop about 2 tablespoons of butter cut into pieces all over the to before laying on the top crust. My “secret recipe” includes using a mixture of types of apples. I use Granny Smith, 20 Ouncers, Cortland and whatever else I have on hand. Mixing the types of apples seems to add a pop to the flavor when it lands on the tastebuds! You didn’t say what type of apples you use so maybe you mix them up too?
I enjoy your presentation style as well! You show yourself as a warm and confident woman! I’m so glad that you’re not all gabby and bubbly or playing obnoxious music!
You earned my subscription to your channel after one video! I am looking forward to learning from you!

Excellent tips! Never heard of cooking the filling in advance…wonderful. For 120 years my pie making forebears dampened the top edge of the bottom crust with a bit of water on a fingertip before adding the top crust to “glue” it in place when wrapping the two edges together. I’m impressed you got them to stick without the water!

    • @marieskitchen
      @marieskitchen  6 місяців тому

Hi Karen! Thanks for watching 😊 So glad the cook ahead option is helpful! It’s always interesting to me to hear other bakers’ techniques! I can’t remember ever using water for glue on a double crust pie fold-over edge, but I can definitely understand the benefit! Probably a good idea to start running a wet finger around the edge if the bottom crust before adding the top though … so I think I’ll start doing thst 🥰 Thanks again, Marie

Thanks Marie for all the great tips. Can't wait to make my next apple pie using your great ideas. I will say though, that my favorite pie apple is Ida Red. It's not easy to find these days, but is well worth the search. It's not too sweet, nor too tart and holds up, texture wise, to baking. Many years ago, my pastor's wife brought an apple pie for dessert when I invited them to dinner. When I tasted her pie, I said, "This is the best apple pie I ever tasted" I promptly asked what kind of apples she used. She had to think a minute; then said," Ida reds". It was then that they became my apple of choice for all my pies and apple desserts.
