Some things to note: These are jumps that are possible in 150cc, not 200. Done without glitches/OOB clips such as Wall Crossing I believe this number can be shaved down, if you can do it in 150cc id love to see it!
I was actually able to do Big Blue withouth any boosts including the finish line boosts (idk what theyre called). the first boost ramp on lap 1 is quite simple, you use your shroom and hop at the right time towards the right corner of the track and barely get enough height to avoid the boost ramp. for the finish line thingy on lap 2 its the same concept. after the glider, you get onto the right side of the track which is slightly elevated and at the end you shroom and you can barely hop over the booster thingy. the third one is really simple, you just shroom and drive off the track on the right side and you get sent back by lakitu behind the finish line. and since every other boost panel on big blue is easily skippable, it's doable :)

On Cheese Land you can also clip thru the wall on the left then use a shroom and hop. On Shy Guy Falls its a mistery if you touched or not the boost panel, so... go on the left side (far from the ramp) use a shroom and hold down and hop and youll respawn over the gap. Im trying to clip in the wall on the right side in Sunshine Airport and if im able to do it ill upload a video on youtube (on my alt account).
I’ve tried this challenge for fun ages ago and was able to find a way to clear the panels in mute city. But the trick is precise so it would be almost impossible to do a full run of no panels. I did not manage just one lap of it but it’s theory-eticly possible if you are pitch perfect with it. Since i have a switch lite I don’t have a capture card so I unfortunately couldn’t record it so you just have to take my word for it.

for moonview highway I think you can be on top of a truck to go through the boost panels

if you pick a combo with higher speed and get to 10 coins, it’ll be a lot easier to jump over boost panels because you’re going faster
the bullet bill flies so technically all boost panels are possible to avoid
If u do it in 200cc coconut mall bottom path is possible with a fast combo, a mushroom and that trick ramp in the middle of the room
on bowsers castle, just have bowser deactivate the boost panel when he smashes it
Sunshine airport is possible 200cc (ive done it a few times on accident)

you can just hop over the boost panel in music park (i used yoshi, standard kart and standard wheels with 1 coin)
wall crossing is making alot more possible but its a hard trick
