Restaurant Quality Shrimp Scampi on the Blackstone! | Cook Eat Repeat | Blackstone Griddles

    Shrimp Scampi
    Recipe by Nathan Lippy
    Time: 15 minutes
    Servings: 4
    Ingredients:
    1 pound peeled and deveined shrimp
    4 shallots, thin julienne
    4-6 garlic cloves, thinly sliced
    3 sprigs fresh oregano
    2 cups pinot grigio
    ½ cup chicken stock
    ½ bunch fresh flatleaf parsley
    2 cups grape tomatoes, sliced in half
    2 teaspoons red pepper flakes
    3 tablespoons unsalted butter
    2 tablespoons lemon juice
    1 tablespoon chili powder
    1 teaspoon garlic powder
    4 1 inch sliced of baguette or French bread
    ½ cup finely shredded parmesan cheese
    Salt & pepper
    Olive oil
    Directions:
    1. Using a large sauté pan over a burner on medium-high heat. Add a drizzle of olive oil and the shallots. Cook for 3-4 minutes then add the garlic and oregano. Cook an additional 2-3 minutes. Add the wine, chicken stock and half of the parsley (stems and all). Add a pinch of salt and pepper and turn the heat to high. Cook for 7-8 minutes or until the liquid reduces by about 60% and begins to thicken up. Then, add the tomatoes, red pepper flakes and butter. Stir consistently until the butter fully melts and emulsifies.
    2. Preheat your griddle to medium-high heat.
    3. In a medium sized mixing bowl, add the shrimp, a bit of olive oil, a pinch of salt and pepper, chili powder and garlic powder. Toss to evenly coat the shrimp.
    4. Add the shrimp to the griddle and cook for 3-5 minutes or until lightly caramelized then add them to the sauté pan with the sauce. Chop the remaining half of the parsley and add to the pan. Add the lemon juice and stir to incorporate.
    5. Add a bit of olive and salt and pepper to one side of the sliced bread and toast on the griddle top.
    6. To plate, add 1 piece of toasted bread to each plat and then top with some of the shrimp. Pour some of the sauce over the tops of each and garnish with a bit of lemon and shredded parmesan.

    Can’t believe I thought of a clip that y’all haven’t used. When Nathan talked about the tomatoes bursting I kept waiting for the scene from City Slickers when Billy Crystal is delivering the calf and Curly says to hurry before the mama bursts.       I have to tell you this dish is so delicious. I will be making it again in the near future. The reduction time of the sauce, for me, was 17 minutes.

    I made this tonight only using 1.5 tsp of red pepper flakes instead of the 2 tsp per the recipe, and it was still way to hot 🔥 🥵 for wife and son. I handle spicy heat better than they do. We added Alfredo sauce to mellow it out.
    How about a little heat warning next time? I learned that I need to start with 1/2 of the heat ingredients then season to taste.
    OTHERWISE, awesome flavor and a top notch recipe!

    This video had a shenanigan level of 3.8 which is perfect. 4.2 is the upper limit of “acceptable”. It was a welcome change from the 12.4 shenanigan level that you’ve been averaging with “CJ’s Last Cooking Show”. Thanks for the quality upload. I’ll be making it this week.

    Looks to be a great recipe, and I've bookmarked it. But, I'm not sure that cooking on a side burner in a pan, even if it is a side burner on a Blackstone, counts as a "true" Blackstone Griddle recipe....

    This recipe might be good, but I just can’t deal with all the nonsense.? 3 1/2 minutes into the video and all you’ve done is chopped up a shallot !!! That for me is enough !!!
