- To me, Shrimp Scampi is decidedly about the shrimp, and less so about the pasta (although, HOW FUN ARE THOSE SHELLS?). The important thing here is that you have a lot of saucy, glossy businesses all over whatever you’re serving it on (pasta, rice, more vegetables) or sopping it up with (toast, obviously). Season the shrimp with plenty of salt and pepper before adding it to the skillet- I once did not do this, and it made a huge difference (in a bad way!).

5:28 Build the sauce with onion, garlic, butter, and olive oil
6:45 Drain the pasta and add the shrimp to the sauce
7:43 Add white wine and chili flake to finish your sauce
8:13 Chop chives to reinforce the garlic-y flavor
8:53 Toss the shrimp with the pasta
9:05 Chop parsley to add with chives to top the pasta
9:24 Plate the Shrimp Scampi and finish with lemon
10:10 Taste the Shrimp Scampi

I don't know who edits Alison's videos but that guy/gal deserves a pay rise and a promotion. When Alison was asked 'how does it feel to have deveined so many shrimps' and then the champion music came on with the little label '17th Championship in franchise history'. I lost it, I thought that was hilarious!

I felt like I cooked and ate like in a very fancy gastronomic restaurant (and I ate at Robuchon and Ducasse so it is not only a fantasy). I am French but used to live in NYC for 10 years. I just wanted to say how amazed I was by the different layers of flavors and wanted to say thank you... it was incredible ! I bought your two books after that !

Ok this looks DELICIOUS. Scampi is a go to on the menu especially in Italy. Always impresses
This was fabulous. Even the 6yo gave it a go! He nibbled the shrimp (journey: 'I love it!' --> 'I like it' --> '...' --> 'I don't like it'... this happens a lot) but LOVED the sauce & mopped it up with crusty bread. We made it with tagliatelle (his idea). This is a win!!! Definitely making it again!

Alison you are the only dish I would request
You can also skewer the shrimp horizontally with a toothpick along its back (perpendicular to the shrimp) and lift up, which will release the vein, and you can pull it out super easily. Saw it done in Japan and it was a game changer for me.

When I watch your videos I always play ‘scavenger hunt’ with your kitchen. You have the coolest, most awesome home kitchen. That could be a contest. Find the….or what was different from the last video. You could give away a book, a kitchen tool, a cool t-shirt, shrimp earrings, bag of coffee, bottle of wine. This list could go on. I’m not sure I would wear the shrimp earrings.

Oh, this looks epic ! A very well-done video !You mentioned Not overcooking the shrimp, and I so agree ! My Florida life included a lot of seafood, catching it and even getting scallops. For simple boiled shrimp supper my Mom would put the shrimp, shell on, into a pot, NO water added, and cover/cook till shrimp was coral/pink. Then ready ! They boiled in their own juices, at a lower temp than high, and she did stir to get all the shrimp done. So good, simple. I love what you cooked and will follow your tutorial. Shrimp Scampi was a little too fancy to make in my house, but as an adult I would try and make some and also order in restaurants. I need a good recipe, and I've found it. Thank You !!
Love your energy & recipe, chive is a great call, going to make this tmr. Tip for anyone who wants a thicker sauce, add cold butter at the end. It makes it less of a coating and more of a sauce. I usually split the butter up, and reserve half or 1 quarter to add at the end.

Just made this for dinner tonight! Omg definitely the best shrimp scampi I’ve had. I used half the amount of garlic and butter. I also used broth with a little vinegar instead of white wine. Sooo delicious with the shells ❤️
