New Years Dumplings recipe - my mom's kimchi mandoo!

    Every New Years, my mom makes a huge batch of kimchi dumplings that she hands out to people. I love these kinds of traditions and decided to record her process this time! She doesn’t measure her ingredients and so I got a rough estimate and also she makes a lot!
    My mom doesn’t measure when she cooks so this is an estimate.
    This makes around 150 dumplings.
    I would recommend
    Ingredients:
    4 blocks firm tofu
    4.3 pounds well fermented kimchi
    5 16 oz. bags bean sprouts
    4 pounds ground pork (20% fat)
    1.5 pounds ground beef (10% fat)
    1 bunch (~7) green onion
    2-4 bunches large garlic chives
    35 cloves garlic
    3 tablespoons soy sauce
    5 eggs
    1 cup sesame seeds
    1 cup sesame oil
    Salt and pepper
    Dumpling wrappers (store bought), around 150 individual

    This was lovely to watch. It was nice having a mother son collaboration.
    Please try not to worry about posting weekly (is it a must?) as well. Your health is way more important. I'm just happy to see what delights you share when I get notified when ever that is.
    Garlic is up there with black pepper. More garlic the better! haha 😄

      Thanks so much! Ive been feeling a lot of fatigue from uploading weekly! Haha. Even though its just one a week, its hard to balance with work and life. Haha
      But yesss Im just like you! Theres never enough garlic or black pepper!

    This video calmed me down so much! What a safe space! So lovely that you did that with your mum. Just one question: why is the Kimchi being washed?

      This kimchi is based on the dumplings my grandpa used to make and is a north korean mandoo which has simpler notes than south korean mandoo. I believe it is a matter of preference on if you want a strong kimchi flavor or more of a blend between meats, veggies, and kimchi. You can also just add gochugaru (korean red pepper flakes) as well! :)

    I've been watching your videos for a little while! I've been too shy to comment till now, but I really love seeing your cooking process! It's very calming :)
    Also as a Korean, seeing you make Korean food makes me v happy & proud, every time I watch a Korean food video I start going "Look! that's food from my country! I've eaten that before!! :D ".
    I can't really eat food that's too spicy, and washing the kimchi looks like a great solution for low spice tolerance, especially since you mentioned you're handing them out!
    The dumplings look delicious, I miss making dumplings with my extended family as a kid haha.

      I also have fond memories of making mandoo as a kid. Maybe back then I wasnt so excited to make them, but looking back now, it’s a great memory! Haha.

    super sweet and cozy vibes in this video. what happens to all the kimchi brine you guys wash off? is there any way to use it in soup maybe? also you & your mom are both super clean at folding those dumplings i'm jealous

      I believe the washed off brine was discarded. You might be able to use it to make some kimchi jjigae! But you would need to account for extra kimchi to add as well and also the brine being watered down. :)

    Question!!! I know it’s a dumpling mixture, but would you be able to make meatballs with the mixture? Is that a forbidden cultural crossover? 😅

      Making meatballs and pan searing them or boiling them in hot water is great in soups

      Haha I havent really heard of mandoo meatballs but I dont see why not! :D
      But maybe they could use some starch to help them stick together better if you want to make them as meatballs.
