I'm 72 years old and I grew up on chix & dumplings. Mom always put potatoes in hers. Her dumplings were just flour,broth & seasonings. Yep, all meat had the bones in. Celery was the other veggie, Chef. She also added "petmilk" Mom was from Alabama. She passed away at 97yrs old. Like you, I miss her very much

Oh Chef! U have made my heart sing just watching cook this and enjoy eating it! My Grandmother died when I was only 3. So my Great Aunt was filled n as my Grandmother. Even at 98 and totally BLIND, she could cook better ckn & dumplings than I can make at my age - well over 60!! I am blessed! Ty for showing me an even better way to make mine! BTW my husband and I still argue over adding the ckn skin or leaving it out after 48 years! Since I cook, I get to leave n some! LOL!
Here in New York City we called an old soup hen, a fricassee chicken. Made for a great pot of soup or stew! Now they don't differentiate between the types of chicken since butchers became a thing of the past. I miss those days.
What a fine tribute to your mother! On my late mom's, dad's, aunts' and grandmother's birthdays, I always make whatever food I remember them liking. Also, cooking older people's favorites for them while they're still with us is such a blessing, for them and for us. There was an older man, from who I got to know at church, when he was in his 80s. He mentioned how much he liked fried green tomatoes, so I called my friend who grew up in the South and found out how to make them. When I could get some green tomatoes, I made some for him. He really enjoyed them - hadn't had them in decades, because you really don't see them in Wisconsin. So, I made some for him every summer. He died in Dec, 102 years old. I'll make some this year, too, and think of him. Your video is a great reminder of how food is part of every person's story.

I freeze all my carcasses when I make roast chicken just so I can make chicken and dumplings. Soooo good and it's something that I always have the stuff to make. Once I even made it the rest of a store-bought rotisserie chicken I had... that carcass made a RICH broth it was amazing. And I'm with your mom, the dumplings are the best part! My teen boys fight over them lol
I'm okay with adding carrots and a few additional veggies in just to extend the meal a little. If you can get a couple extra servings out of one meal, I'm fine with it.

It's funny, I had a craving for chicken and dumplings for this weekend! I have a small ham for my granddaughter to go with some fried cabbage (another craving was for cabbage). I make the harder dumplings with 3 whole eggs, because my grandmother made them that way. Also added 1/4 rap of baking powder to make them float to the top of the broth when fully cooked. They were not mushy because the egg firmed them up. tms poet Ohio. ( These I made professionally at a restaurant.

I discovered you by looking on Google for chicken gizzard gravy and I cant wait to make it, and your chicken n dumplings and ox tail soup. I have the same red lodge cast iron pot as you too. I love it. Thank you for the wonderful recipes. My mother passed in 1994 at a very young age of 47, she was Cuban and I learned a lot of her recipes and traditions that I carry on today. I grew up on beans and rice and I make a delicious pot of red beans with gizzards, hocks, and smoked sausage. God Bless you and thank you again for sharing your family tradition meals. ❤✌

He's a white meat only fan, I'm a dark meat fan. Plus, dark meat adds so much more flavor! I cut your dumpling recipe in half. Ok, are you sitting down? I added fresh parsley to the dumpling mix. I know, I know...not traditional, but I had parsley that needed to be used and I love the fresh flavor it adds. Other than cutting the recipe in half and adding the parsley, I followed as viewed. Oh my, I remember my Mom's chicken and dumplings. She made it like you do, simple good food for the soul. She didn't put celery in it. I make it the same way. It's so good! I pick out the bones and then add the meat after I cook the dumplings. Salt, pepper a little garlic and it is heaven on a bun!

Thanks to Chef Jeff, it is not as intimidating as it looks. I didn't feel 'qualified' to feed dumplings to my children cuz it just seempt' like it was one of those dishes for the masters. This is a testament that we're never too old to learn.

I pray you had a blessed Easter Chef Jeffrey. I like making my dumplings by the spoon drop method similar to my spoon drop biscuits. I usually add whatever I have on hand; onion, celery or bell pepper and the seasonings. Your chicken and dumplings looks so delicious and rich. A great meal to have on a cold day or whenever. My mom (RIP) never made this dish but she did make her version of fricasse chicken using a fowl chicken and stewing it down with just chopped onions, water, salt and black pepper until the chicken was extra tender. She never thickened the juice and would serve it over plain rice and it would be the best meal ever.

I know, I know...not traditional, but I had parsley that needed to be used and I love the fresh flavor it adds. Other than cutting the recipe in half and adding the parsley, I followed as viewed. They were born in '21 & '41, and I came in '81...they would have been so impressed that "the baby" made something so good ❤

Oh my, I remember my Mom's chicken and dumplings. She made it like you do, simple good food for the soul. She didn't put celery in it. I make it the same way. It's so good! I pick out the bones and then add the meat after I cook the dumplings. Salt, pepper a little garlic and it is heaven on a bun!

Thanks to Chef Jeff, it is not as intimidating as it looks. I didn't feel 'qualified' to feed dumplings to my children cuz it just seempt' like it was one of those dishes for the masters. This is a testament that we're never too old to learn.

I pray you had a blessed Easter Chef Jeffrey. I like making my dumplings by the spoon drop method similar to my spoon drop biscuits. I usually add whatever I have on hand; onion, celery or bell pepper and the seasonings. Your chicken and dumplings looks so delicious and rich. A great meal to have on a cold day or whenever. My mom (RIP) never made this dish but she did make her version of fricasse chicken using a fowl chicken and stewing it down with just chopped onions, water, salt and black pepper until the chicken was extra tender. She never thickened the juice and would serve it over plain rice and it would be the best meal ever.
