    粉果內餡材料:
    1. 生油 - 20-25g
    2. 切碎紅蔥頭 - 8g
    3. 切碎蝦米 - 10g(未浸重量)
    4. 切碎沙葛 - 120g
    5. 切碎甜菜脯 - 40g
    6. 免治豬肉 - 250g
    7. 炸花生粒 - 100g
    調味料:
    1. 生抽 - 7g
    2. 蠔油- 10g
    3. 老抽 - 7g
    4. 白砂糖 - 7g
    5. 雞粉 - 7g
    6. 糊椒粉 - 2g
    7. 水 - 160g
    8. 粟粉水 - 47g(粟粉-7g+水-40g)
    粉果皮材料:(大約520g,25g個X20pcs)
    1. 澄麵 - 120g
    2. 木薯粉 - 50g
    3. 白砂糖 - 5g
    4. 滾水 - 280-300g
    5. 木薯粉 - 70g
    6. 粟米油 - 15g
    7. 手粉(木薯粉) - 15 - 20g
    其他:
    1. 手粉(木薯粉) - 50g
    2. 牛油紙 - 20張
    Steamed Chiu Chow Dumplings is a kind of Hong Kong DIM SUM in Chiu Chow style. It’s make with wheat starch & tapioca flour as dumpling skin , & wrapped with minced pork, yam bean, sweet radish etc. It’s very delicious.
    Dumpling Filling:
    1. Corn Oil - 20-25g
    2. Chopped Shallot - 8g
    3. Chopped Dried Shrimp - 10g (weight before soaking)
    4. Chopped Yam Bean - 120g
    5. Chopped Sweet Preserved Radish - 40g
    6. Minced Pork - 250g
    7. Deep-fried Peanut - 100g
    Seasonings:
    1. Soy Sauce - 7g
    2. Oyster Sauce - 10g
    3. Dark Soy Sauce - 7g
    4. Granulated Sugar - 7g
    5. Chicken Powder - 7g
    6. White Pepper Powder - 2g
    7. Water - 160g
    8. Corn Starch Water - 47g ( Corn Starch - 7g+Water - 40g)
    Dumpling Skin: (around-520g,25g
    X 20PCS)
    1. Wheat Starch - 120g
    2. Tapioca Flour - 50g
    3. Granulated Sugar - 5g
    4. Boiling Water - 280-300g
    5. Tapioca Flour - 70g
    6. Corn Oil - 15g
    7. Hand flour (Tapioca Flour ) - 15 - 20g
    Others:
    1. Hand Flour ( Tapioca Flour) - 50g
    2. Parchment Paper - 20張

    為什麼粉果皮很難埋口,包的樣子爆裂。

      餅皮唔可以掂到油,否則容易爆裂。所以餡料到乾身一些;始果餡料太濕,最好雪一晚。
