    Dark sesame oil is a finishing oil and not a cooking oil. it has a low smoke point and the taste becomes very bitter when used for cooking.

      Sesame oil is not an oil that is generally cooked. It’s usually used as a flavor additive oil usually added at the very end or close to the end of the cooking phase: it tends to lose almost all of its flavor when cooked, so for that reason this amount of sesame oil probably didn’t overpower the flavor of the tuna.

    Quick rule of thumb with sesame oil: light in color is good for cooking. Dark is toasted sesame oil, which is better for flavor and aroma at the end of the cook

    I prefer tuna with simple seasoning and maybe sesame at the end, too much stuff and you don’t taste that clean, fresh tuna. Also it’s not good to cook with that oil, it’s for flavour and tastes not great if you cook with it.

    As a professional chef, I recommend you keep that tuna at the proper temp, under 38 degrees until ready to cook. Fish, especially cut fiah, have certain bacteria and viruses that can become deadly.

    Just a comment, that sesame oil you used was for garnishing not cooking once you cook that sesame oil most of its flavor will be gone. Use the other type of sesame oil used for searing and cooking.

    I like to cut that tuna into cubes and make a tuna burger. Lightly sear it with whatever sauce and greens you like. I stole that idea from a kitchen job years ago.

    The most toasted sesame oil you want to use on a filet that small is about 1/2 teaspoon (AFTER YOU COOK THE FISH). All you would taste on a delicate piece of tuna like that would be Cajun sesame oil. Totally destroyed a nice piece of fish

    I know this is the Dan-o's channel but I'm gonna be honest - it's not necessary for seared ahi tuna, not is it the best seasoning to use. I would recommend something simple like white pepper powder and Japanese 7 spice (togarashi). Also, when you're making sesame crusted ahi tuna PUT THE CRUST ON THE EDGES TOO!!!

    I've seen lots of comments on the oil being a finishing oil... valid points. I want to know why the hell would you use a Chipotle seasoning?! Marinade then neutral oil with salt and the sesame seeds. I'm not sure of the variety of dan o's there are, however you may want to come up with something more asian or Japanese?

    Gross. Tuna should be raw or canned. I've had expensive cooked tuna and it's gross. The cooked layer taste like bad pork and the good part is warm when it shouldn't be.

    Chipotle rub and tons of sesame on such a nice tuna? I guess it's fine if you like it, but that fine tune would work great with just a light seasoning. Like a good steak. Don't cover the taste with heavy seasoning.

    Don't flip your tuna until it has released itself from the pan. Otherwise, it will tear, and the structural integrity of the tuna will be messed up. That sliced Ahi looks delicious.

    I don’t recommend cooking with sesame oil. It’s a finishing oil and gets kinda gross when you cook it. Might get away with it on tuna just because of the short time you cook it for typically
