  • A bit of a fun one today - I try out some recipes from Jerry Thomas' Bartenders Guide from 1862!
    The Bitter Truth recreated the 'Bogart's Bitters' from these recipes, although apparently it might just have been a misspelling of 'Boker's Bitters'. But, are the recipes tasty?! Let's find out!

    I just got a bottle of the Bogart’s bitters myself. Love the packaging and bottle shape. Mine came with a little recipe book inside as well as the ones on the outer box. I’ve not experimented much with them yet, but it sure makes a great old fashioned.

    David Wondrich has published a great book that revises the Jerry Thomas Bartender's Guide for modern measurements and ingredients.

    The measurements in these old cocktail books are all over the map. I have an original Jerry Thomas book from 1862 and another from 1887 - and like many of his contemporaries he doesn't elaborate on the sizes of his measures.
    When I look at cocktail books from the very start of the 1900s (1900 - 1910), the writers do give insight into what a 'wine glass' is... but some books list it as 2oz, some as 3oz, and some as 4 oz. Again no real help other than when making the cocktails contained in that particular book. There was no standard.

      P.s. the gomme or gum syrup would have been sugar syrup with Gum Arabic mixed in.

    Curious as to what the second one was called? But I came across the Japanese cocktail first in Wondrich's Imbibe, he talks about how it was called the Japanese cocktail either in honor of the Japanese diplomatic mission to the US, or to capitalize on the media hooplah. There was a younger member who became notorious for his partying and apparently he was a big hit with women as well, so could be a connection?
    As to gum syrup, traditionally it was a simple syrup fortified with gum arabic, giving it a more viscous and richer mouthfeel!

    Love your content. For me (also got a bottle last Christmas) it taste akin to to the Danish aperitif “Gammel dansk”. I have used it with success in my take on a Martinez. But, what would you suggest as a use in a classic cocktail (disregarding the recipes on the box)?

    Back then 😳they had to breakup the Ice 🧊 you have to have a Real setup of Booze 🍸 to make these drinks 🤗😬💕

    The gin cocktail is basically a white lady with the proportions wrong and the egg white replaced by the bitters, which results in a murkier thinner drink. The bones of a good drink are in there, but it needed the refinement it eventually saw in subsequent decades!

    Such feels when you make a cocktail and it's not great, and you wonder why someone would publish such an unbalanced drink...
    Then you realize you missed out an important ingredient... Reshake... Still bad... Then you realize you missed another important ingredient... You know what, I'm just not gonna like this one no matter what 😂

      Tastes and trends were obviously a lot different in the late 19th century. What seems out of balance now would have been perfectly balanced then. Look at what a rollercoaster ride the Martini has been through in the last 100+ years, the proportions and ingredients have varied widely from one decade to another to reflect people’s collective tastes (or lack of).
