Yeah, I avoid any cocktail recipe with egg whites in it. I bake, so I know what a pain in the tuchus egg whites are when they're not interacting with alcohol, and the idea of mixing the two does not appeal. If there's a trick, I'd love to know it.
As a bartender for many years...egg white cocktails IN GENERAL, give me anxiety. I wish I knew the exact chemistry behind what and why some egg white cocktails curdle. I've never had an issue with it, making a Boston (whiskey) sour...but on others, I have. And I'll be damned if I know why.
As a bartender who runs his own cocktail program, and loves egg white cocktails, I would love too see an egg white video. I only put an egg white cocktail on the menu in the winter for cleanliness purposes and batch my egg whites for easy measuring. Its a pain, but I find less egg white goes as far as a lot of egg white. Love your videos and would love to hear how you handle your eggs!

I love the fact that you brought up the whole egg white scrambled egg issue. I make a ton of egg white whiskey sours at my bar and I’ve noticed this specifically happens more often with higher proof bourbons. The separate tin method is something I’ll definitely be using in the future, but I’d really like to see a solid video breaking down what’s happening from you in the future.

We use the Michael Ruhlman method for all egg white cocktails - dry shake just the white first, then dry shake all the liquid ingredients together, then finally shake with ice. It’s a lot of work, but has never once failed us - no curdling or scrambled eggs ever. These drinks look awesome, can’t wait to try to recreate at home!

I’d love a egg white video! When I started making cocktails at home a screwed up a few whisky sours and thought it was some chemical reaction between the egg white and the acid lemon juice. I used to add the egg white in the shaking tin, than stated to build the cocktail on top of it. The egg white scrambled… After a few tries, I figured out I could build the cocktail in the larger tin, than serve the egg white in the smaller tin, than mix all together really fast and do a dry shake. After that wet shake and serve. My whisky sours ended up perfect following this method
I like the millionaire cocktail#1 as I like an excuse to use my sloe gin which I kept thinking I was out of so I kept buying bottles and now I have like 5. Its from a local distiller(spirit works Distillery) so I like to pretend I was just helping a local business and not just getting old and having a terrible memory.

So, when I use egg white with higher proof alcohol (100 proof or higher), I start with ice in my tin, then crack the egg white over the ice to cool it down. Then I pour in all the alcohol, do a wet shake with it all, then empty, and dry shake. Usually works great. Looking forward to trying these!

Great video! Yes on the egg video please. I made the Millionaire Royal because I had all of the ingredients. It was really good and came out perfect! I use a hand held milk frother from Amazon instead of dry shaking. I have much better luck with that and it is a lot less messy.

Cool drinks :) i tried side by side egg whites vs aquafava and the aquafava yielded much better drinks consistently. Better foam, less eggy odor and velvety mouthfeel.
For the egg white issue, just add it at the very end, right before shaking. Yes, ethanol and acids curdle proteins quite easily, but it takes a bit of time. With this, I haven't really had issues at all.

The Appleton 12 year is such a bargain. Rum is so under appreciated compared to other dark spirits.
What does it cost where you live? Here in Sweden, it's like $85 after taxes, but we have quite a bit of taxes on spirits.

Fee Foam actually works very well as an egg white substitute. You need to use a lot of it (like 10 dashes), but it works.
