  • My favorite, a plain sausage thin crust.
I used a new crushed tomato that was too watery and my pizza was a little drier than I like in this example.
When we experiment and our pizzas don't turn out the way we would like, they are still better than anything we can buy!

    Hey Jim,
I lived in the Chicago suburbs for 49 of my 56 years and I moved to Colorado 7 years ago to be near my daughter and grandkids and let me say I have never found Chicago thin crust tavern style pizza anywhere in this state - can't be done, I've tried. I watched numerous videos on how to make it and then one day I decided to try it. When it came out of the oven it looked exactly like what I wanted and when I took my first bite, I was in Heaven!!! I grew up on Aurelio's and Nino's type pizzas if that gives you any indication of what I've been missing. The pizza I've been longing for I could make myself and I was thrilled I could make my own. You can see my finished product on my Community tab on my channel if you want. I had a subscriber comment on that post stating she had the same problem and couldn't find that type of pizza after moving. She asked me to do a video on it and this is the weekend I'm going to do the video for her, and, anybody else frankly that has moved away from the Midwest area and misses their pizza! I've watch a few of your videos and have more to watch. Love how you do the different types of pizzas and everything else you have on your channel 🙂

Nice to hear from a thin, square cut pizza fan. I have had several Chicago pizzas but not the two you mentioned. I remember one owner from Home Run Inn giving me a 20 minute tour back in the 70s then he and his senior partner joined us while we ate. Fond memories!
My videos were originally for my book but I decided to make them public and am just about finished.
All the formulas are in my how to book.
Where do I see your video?
