Goan Fish Caldin | Coconut Milk based Curry with Pomfret

    Here's a recipe that may feel like home to many. The Goan Fish Caldin- a recipe requested by a lot my viewers, is now here for you to watch and try for yourself! This is a curry with very subtle flavours, and works best with Pomfret, prawns or dried prawns. With a spice line-up (masala base) very similar to the Goan Verdur, the distinguishing factor in a Caldin is the sweet, lovely Coconut Milk, while the Verdur makes use of all the coconut flesh.
    In our home, and even as I grew up, we always cooked a Verdur curry over Caldin, simply because extracting Coconut Milk was quite a task, and also since using the coconut pulp provided bulk to the gravy. So, for me, Caldin is not a staple, go-to curry. But it's good to have a variation in daily meals :)
    Ingredients:
    3 medium-sized Pomfrets (cleaned)
    1 Tablespoon Salt
    1/4 teaspoon Turmeric
    For the Coconut Milk:
    1 & 1/2 Cup fresh, grated Coconut
    1 Cup Water, for the thick extract
    1 & 1/2 Cups Water, for the thin extract
    For the Caldin Curry paste:
    2 Tablespoons fresh, grated Coconut
    1 Tablespoon Coriander Seeds
    1 flat teaspoon Cumin Seeds
    4 Cloves
    8 Black Peppercorns
    1/4 teaspoon Turmeric powder
    1 inch piece of Ginger
    4-5 Garlic cloves
    4-5 Green Chilies, adjust as prefered
    Tamarind, a smaller lemon-sized amount soaked in warm water
    A little Oil, for frying
    1/2 teaspoon Sugar
    Salt to taste
    A slit Green Chili, at the end
    *After pouring in the thick Coconut Milk, the curry mustn't be cooked too long.
