This is not the correct way . Onions and rice Powder to grinded together with coconut . No tomatoes as tamarind is there . Green chillies and finally chopped onions to start with .in coconut oil a must Add grounded masala . Add water . Put fish after first boil and finish with coconut milk finally . Coconut
You are my favourite owing to your polite humility, well-thought over procedure which you break down into the simplest possible steps and the result is short videos covering all important and only relevant details. To top it all your vocabulary which adds a unique flavour to your videos.
Very beautifully explained ,the background of the dish. I am from Goa and this recipe is a routine one and believe me we end up drinking it . Thank you for sharing this classic Portuguese oriented recipe
It also depends on the teacher, if the teacher is good then yes, you show your dedication and respect. I had some horrible teachers who should not be teaching children.
You cannot substitute pomfret with any fish. High flavored fish like Tuna cannot be used. You can use King fish aka surumai/ vanjiram, Karimeen aka green chromide ( kerala green chromide, not andhra variety ), white snapper, silver biddy,or some time red snapper. Thats it...
Hey Varun this recipe of pomfret caldine I must say is exactly how my Mum makes it back home in Goa..Love all your recipes and tried some. Thanks for sharing
Traditionally in Goa, Caldin is served to people who are convalescing from an illness, quite possibly because of its mildness and the use of Ollod (turmeric) and Meeri (black pepper) which act as anti-inflammatory agents. Your use of additional coconut cream is puzzling, particularly because you’ve already reduced the coconut milk to the desired consistency. Your reason?
This recipe is similar to Goan fish curry or even Karwari curry, usually made with red chilies and green chilies are added for tempering or just like that and coconut oil is used. Instead of straining, we directly put curry mixture in cooking pot and yes some thick coconut milk is added.
how is this "Portuguese curry"?? Coconut is not native to Portugal? neither is haldi, cumin, black pepper, sugar OR Tamarind. Other than the name I don't see any roots there!! coconut oil also has no connection to Portugal. ...not until they found west Africa, Brazil and India. Yes, "Goan vinegar" can certainly claim European heritage. Anyhow Goan food is certainly delicious. FYI There is nothing close to this curry in Portuguese menu.
In love with all of your recipes. Thank you won't be enough for doing what you do to help us! And for continuing your work even during these difficult times :) Much love and good health to you and your family!
