- Ingredients:
- 1 can of coconut cream
- 2 small cans of chickpeas (drained and rinsed)
- 4 small tomatoes or 2 large tomatoes (diced)
- 1 onion (chopped)
- Spinach
- 1 tablespoon complete seasoning
- ¼ teaspoon Pink or regular salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 4 cloves of garlic (minced)
- 1 teaspoon paprika
- 2 tablespoons curry powder
- 3 tablespoons olive oil
- ¼ teaspoon ginger powder
- ¼ teaspoon coriander powder
- ¼ teaspoon red pepper flakes
Cooking instructions:
Combine the following seasonings in a bowl or plate:
- 1 tablespoon complete seasoning
- ¼ teaspoon pink or regular salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- ¼ teaspoon ginger powder
- ¼ teaspoon coriander powder
- ¼ teaspoon red pepper flakes
Chop the onion, mince the garlic, and cut or dice the tomatoes. Strain and rinse the chickpeas, then boil them for 10 minutes. Clean the spinach.
Heat 3 tablespoons of olive oil in a hot pan. Add the chopped onions and cook for about 5 minutes. Then, add the minced garlic and cook for an additional 3 minutes. Add the spinach and sauté it for about 4 minutes. Stir in the chickpeas and the prepared seasonings, mixing thoroughly. Add 2 tablespoons of curry powder and cook for a few minutes. Then, stir in 1 can of cream of coconut and add the cut tomatoes. Let everything cook together for 10-15 minutes, until well combined and cooked through. Serve with rice or enjoy on its own.
