- This one-pan coconut chickpea curry is one of my favorite vegan and vegetarian dinners when I need something tasty on the fly. It's pantry-friendly with simple ingredients and filled with deliciously bold Indian-inspired flavors. And while it's begging to be served over rice, there are endless ways to enjoy it throughout the week.
I love this recipe because it's healthy, budget-friendly, meal-prep-friendly, loaded with plant-based protein, and incredibly flavorful, with all of those warming, curry spices. It's just SO GOOD. This will be a new favorite dinner recipe!

Never heard of cilantro - I'd use coriander or spinach instead.
I think the recipe would be improved by adding butternut squash.

Toasting off the spices first is the authentic Indian way, and it brings out far more flavour

So, lovely to see this variant of the most common North India dish. Here, it's called chole (chickpea) dal (curry). You could also grate tomatoes (tomato puree) and add the puree after the onions are slightly fried.. The tomatoes make it all the more tasty and tangy. And the spices could be added after the tomatoes so that the taste of the spices are perfectly blended. Again, lovely to see that everyone here is liking this Indian recipe. ❤️

I make a version of this curry, except that I add cubed butternut squash or sweet potato. It adds a lovely warm note to the curry.

This is one of my top 5 favorite recipes from the book, and I’ve made it often. It’s fun to see the “live action” though, which reminds me… I need to make this again soon. Like… oh I don’t know, tomorrow? This is comfort food at its most wholesome and yummy.

You made one of my favourite dishes 😅 it tastes so good with rice or garlic naan. Super filing too. I love adding a salad of red onion, cucumber and lettuce to this. The salad makes it taste 10 times better 😊

I’ve been making this since I bought the cookbook! It’s my husband’s absolute favorite! I usually make a double batch and freeze some in souper cubes so he can make himself some if I ever have other dinner plans.

Great looking dish. Chickpea curry isnonenif ourvstaoles. We make from both light coloured chickpeas as well as brown ones.
We soak the chickpeas overnight and cook them usually in pressure cookers but also in open vessel, if one has the time. (I haven't seen canned chickpeas I our markets but may be available in special stores).
We use that cooked water for curry instead of extra broth.
All the spices that you have listed are ground with onion, garlic and ginger into a smooth paste, together with some tomato. This forms the thick, creamy and juicy gravy. We add either coconut or some cooked chickpeas while grinding the masala paste.
It is usually paired with white steamed rice or chapathis (indian flat breads) or pooris (puffed wheat breads)..
I would like to say that the version that you have shown here will be easy to make and will be very tasty.

To end I would say that in India we have many many traditional vegetarian dishes which today can be labelled vegan.

For those unfamiliar with the term cilantro (Australians) it’s coriander.
Sounds delicious and I've love to give this one a try. However, do you think the cilantro could be replaced with basil? I must have the anti-cilantro gene because I can't stand it - to me it tastes like the smell of stink bugs!
Sure! You could also stir in parsley, mint, or other herbs or leafy greens.

No worries! You can also stir in chopped parsley, mint, or other tender herbs and greens. As for the chickpeas, you can do either, but it will soften anyways after sitting in the curry sauce.

'Cilantro' refers to leaves and stalk OF THE PLANT...
Coriander caN refer to just the dried seeds or to the whole plant.
They're named differently in different parts of the world ... my caps-lock is ....
