Right. I think too many videos out there advise just using plain burgers with salt & pepper (obviously, they'll recommend a brisket / chuck blend most of the time), but you can do ANYTHING to the meat as long as 1) it doesn't destroy the fat (20-30% ratio), 2) Doesn't prevent the meat from forming into a patty. If you can marinate ribs, steak, chicken, pork - you can apply the same treatment to a burger. Fat is a wonderful vehicle for imparting flavour - if you can infuse it, it'll change everything.
I have to say, after you asked your wife if you could call her back and looked at her with the little smile and said "I love you" about had me in tears because it was so sincere. Get someone that looks at you the way Sam looks at Kelly. ❤️

I recently had dinner at one of my favorite restaurants in Atlanta. Houston's (Hillstone Restaurant Group) has been "consistently consistent" since the day they opened over 30 years ago. I've been to several cities where their restaurants are located and...they are great. I had the Hawaiian ribeye the other night with a house salad and a loaded baked potato. It was WONDERFUL. I've downloaded their marinade recipe and followed it. Mine might not have been as good as theirs but it was really good. Maybe a suggestion for one of your shows to look at their menu.

The Makers is a good choice being a wheated (sweeter)bourbon. Im curious how a rye forward bourbon , maybe standard Four Roses Single Barrell (35% rye), would go with these. Maybe instead of BBQ rub use a spicy rub and add some Fresno chilis or Jalapeno peppers. Id like to see how the high rye (spicy) plays w the a more heated rub. Great job as always!

Looks great. Never marinated mine before. I've been making pup style smash burgers for years, imo they're the best burgers in the world. These days only cook good food once a week or so, but I'm obsessed with discovering and eating the best foods the human race has to offer. I cant hardly control myself around hyper palatable food and I'm already obese, that's why I dont cook often. My only critique for possibly a tastier burger here would be slightly small/thinner patties, then just use 3 patties of them if you want that same meat volume. Thinner patties create a greater fried surface ratio which increases the flavor that set smash burgers apart.
Soy, salt, pepper, garlic...this is how I do my steaks, marinated overnight then allowed to come up to room temp before the cast iron magic. While it's resting, butter slabs get added, and it sits for as long as it was heated. All you need then is a solid baker with cheese and de-glazed drippings and a dark beer. I prefer Späten Optimator when I can find it, Shiner Bock when I can't.
Sam that burger looks absolutely delicious I really want to try it I noticed you used makers mark do you suggest any other bourbon or whiskey 😊 I really want you to try to make bourbon steak maybe out of a fillet

This is why I normally avoid watching Sam unless I just ate. If you're hungry, it's torture to watch, if you're not it's great fun, and if you're trying to eat while watching you'll probably end up disappointed by what you're eating v what you're seeing lol

Really like the idea of marinating the beef before but whats happening with the little black pepper & garlic parts if i put it on the grill? I thought they could taste bad if they are too hot cooked or am i wrong?
Sup Sam, omg I make the same, but caramelized onion, hoisin mayo(kewpie), season meat with brown sugar and bourbon seasoning, then marinade, call it asian smashburgers lol, one of only 2 I marinade. I don't add bourbon on griddle I just use marinade lol. I know yours is good, can tell, we like the hoisin kewpie mayo sauce, make doubled on a bulkie roll🤤🤤🤤, will be a great addition to menu👍 Oh other burger I marinade is a Jamaican smashburger. Very spicy lol.
