I made these today and they tasted fantastic. Great recipe. I noticed that many people are saying that their batter is coming out too wet. The same happened to me, so as you recommended, I kept adding flour (a lot of it) until if looked better. I noticed that when you did your video for the malassadas bites, you basically used a recipe that was 2/3rds the size of this recipe, yet you used more flour in that recipe. Did you mean to say 3 3/4 cups of flour instead of the 2 3/4 cups in this recipe? I think that might be the issue. Anyway, like I said, these tasted great and I will certainly be making these again. Hi Nancy! I made the recipe and it was fantastic, i unfortunately don’t have a mixer so I did it ALL by hand. I unfortunately had two problems. 1. The dough seemed to be a little runny and not as thick and easy to stretch like yours, any suggestions I should try? 2. After I cooked them I set them in a glass container with the plastic wrap covering and they before very moist and the sugar wasn’t coated on the outside the way it should be. Any suggestions to help me on my next journey making these? I want to do it perfect for my Vuvó because since my Vovo passed he hasn’t had home baked goods like this. Thank you Nancy god bless. 🇵🇹🇨🇦
Hi there. The liquid measurements need to be exact. If you find the dough is too watery when kneading, add 1/2 a cup of flour at a time until the dough comes together. Hi Nancy, do you use the quick rise yeast? Mine was still wet after 1.5 hrs. I used regular yeast. I followed exactly but it could be the flour I use too? (Five roses)
I tried this recipe and my dough was so wet there was no way it was going to turn into a dough. I hand kneaded for ages then went to the mixer because I just couldn’t do it anymore lol I also ended up putting at least another 1.5 cups of flour gradually to make it somewhat workable. What did I do wrong?? UPDATE: they turned out fine lol I proofed them for the first 30 minutes, saw they were still too sticky after the second knead. So, added more flour after the first proof (the dough looked a lot better after) and did the second proof. I continued with the recipe as instructed and they came out great :)
Hello for some reason my dough was very loose. I followed your directions but what you added to the yeast looked a lot more than what you posted. The amounts in my measuring cap looked a lot less is your measurements correct yours looks perfect not sure where I went wrong

I purchased fast acting yeast, which means I don’t have to active the yeast. So my question is can I just add the yeast to the warm milk & butter after the butter is melted?
Hi Beverley, you can add once you mix the eggs in the mixer and then add the milk and butter mixture and then the yeast. Make sure that your milk and butter mixture is at lukewarm temperature before adding the yeast to the wet mixture. If the butter and milk mixture is too hot, it will kill the yeast. Hi, you may want to check the expiry date on the yeast and while kneading if you find it's not coming together, add 1/2 a cup of flour gradually until it comes together. I hope this helps. 😊

Hi Lindalva, yes. At the time of kneading you would have to add more flour - start with a 1/3 of a cup of flour at a time
