  • Large Recipe for Malassadas (50 to 65)
    Watch this step by step video on how to make my large recipe for Malassadas (50 to 65) Malassadas - Portuguese Donuts
    Ingredients
    1 3/4 cups of unsalted butter
    4 1/2 cups of milk
    3 Tablespoons of active dry yeast
    1 Teaspoon of all purpose flour
    1 Tablespoon of granulated sugar
    1/2 cup of lukewarm water
    12 eggs
    Zest of 1 Lemon
    1 teaspoon of salt
    1 3/4 cups of granulated sugar
    2.5kg of all purpose flour
    Vegetable oil to fry and to place on baking trays
    1 cup of milk to dip your hands in to stretch the dough to form the malassada
    2 to 3 cups of granulated sugar to coat the malassadas once they are fried
    This recipe makes approximately 50 large malassadas or you can make up to 65 smaller malassadas.

    1 Colher de chá de farinha de trigo
    1 colher de sopa de açúcar granulado
    1/2 xícara de água morna
    12 ovos
    Raspas de 1 limão
    1 colher de chá de sal
    1 3/4 xícaras de açúcar
    2,5kg de farinha de trigo
    Óleo vegetal para fritar
    1 xícara de leite para mergulhar as mãos para esticar a massa e formar a malassada
    2 a 3 xícaras de açúcar granulado para cobrir as malassadas depois de fritas
    Esta receita rende aproximadamente 50 malassadas grandes ou pode fazer até 65 malassadas pequenas
    Temperatura do óleo vegetal a 350F

    I am so excited! Malasada is by far my favorite thing on earth and my mother-in-law used to make the most delicious ones. By the look of your malasadas I feel the recipe is probably very similar.     These are some great looking malassadas. I make them, but they don’t look as beautiful as yours. I suppose the trick is to stretch from the inside out to make that indentation in the middle. They taste good, but not beautiful. Thank you for your video and your recipe and the demonstration. Great presentation. Big hug from a fellow Portuguese living in Atlanta, GA who loves malassadas.

    We don’t call it Portuguese donuts we call it portuguese fried dough here. My mom used to rise her dough by filling glass jars from Sanka coffee with hot water putting pan on top of bed and cover with tons of blankets
