    Reminds me of the many mornings I woke to the sweet indescribable aroma of sweet bread being baked by my mom. Miss my mom [mae] so much, as well as the taste of home made sweet bread along with a cup of coffee. Eternal gratitude for my Portuguese heritage.

    First, thank you for this video! And thank you for your great written recipe and instructions! I’ve tried several Portuguese Sweet Bread recipes (in a quest to have a reliable recipe) and have had lots of failures and “almost” right breads. This recipe is the easiest and comes out the best!!! I’ve cut the recipe in a quarter - so it makes one loaf and 4 rolls. Note to anyone making this - the yeast matters. The Saf Gold yeast makes a big difference!!

      Sure!
      For 1 and 1/2 loaves (I make 1 large loaf and 4 rolls or 2 smaller rectangular loaves)
      Starter Sponge:
      1 and 1/2 tsps. Sugar
      1 tbsp Flour (don’t pack it - a light tablespoon)
      2 tbsp Warm Water (about 120 degrees - add yeast after water is mixed with flour and sugar)
      1 tablespoon Fast acting dry yeast (Saf Gold preferred)
      Bread Dough:
      684 g flour (there are 120g in one cup)
      - Original recipe calls for 624g regular flour
      (I use Gold bleached flour - bleached being more refined than unbleached.
      - And 60g bread flour (King Author)
      *** I use 342g bleached flour and 342g bread flour
      3 large white eggs
      1 egg yolk
      1 1/4 cups plus 2 tbsp sugar (I use regular sugar)
      1/2 tsp. salt
      1 1/4 cups Milk
      3/4 stick butter and 2 tbsp Vegetable shortening
      1/4 tsp. lemon extract (optional)
      1/2 teaspoon of mace (optional - not in original Angelo’s recipe - but used by my grandmother)
      Zest of one lemon (no white just rind) - I don’t use this
      Egg wash: 1 egg beaten well with whisk
      More about the flour: I’ve made this with all bread flour and the bread was a bit too delicate to survive the toaster in one piece. I’ve make it as in the original recipe, and the rolls were not fluffy enough (the loaf was fine). So, I’ve settled on 1/2 and 1/2 with the flours. The bleached flour will help with rising, as does the bread flour. Experiment for your favorite combination!

I made this for my first time and my family said this was the best masa they ever had. They couldn’t believe this was my first time making it. So thank you!

    I can't believe how generous you are in presenting this detailed video. My family only went to Fall River from New York occasionally when I was a child. There we had superlative sweet bread (Massa souvada) from a family favorite bakery whose name I have forgotten.     We made this yesterday, it came out so delicious, light fluffy almost! We shared with friends who said they never had anything like it! it is a huge labor of love, but oh so worth it!

      Hi just wondering if you could let me know how many grams of butter this recipe calls he mentions 3 sticks of butter but where I live the butter comes in 454 grams blocks

    Thank you so much for sharing Angelo! My husband is portuguese and I fell in love with Portugal and the food! This is my first attempt at sweet bread. I followed your video to a T and they turned beautiful 😍 and delicious! I'm a visual learner so you doing a video was the best thing ever.     This is great! My mom used to make this but back in the day we didn’t have an oven that would stay on “warm” lol but she used the same bowl as you! The measurements are a little different but I’m going to try your way Monday 😊 thank you!

    Just like my grandmother used to make. I don't know if she used the lard, I was just a little kid back then standing on a chair, as my grandmother mixed her ingredients for the sweet bread. I would eagerly wait till the bowl was empty to eat the little bits of raw dough with my fingers, LOL.😅 My grandmother always saved a little tiny bit of raw dough that she knew I loved to eat. Her kitchen table was filled with a variety of sweetbreads she would make for the family and a few friends. I remember the little breads that looked like turtles. Those were for the kids, me and my cousins! And what a wonderful aroma from the fresh baked breads that filled the house, just thinking about it brings a smile to my face and a sense of joy to my heart. 😊 This was like a stroll down memory lane for me! My grandmother Rosa was from San Miguel Portugal, such a beautiful island!😊

    Could you please do a video on how you make malasadas and classic Portuguese buns? Grew up on those in the 1980s, and would love to know your process. So many people have recipes out there but I can tell the taste and textures are not traditional Portuguese. You're the man Buddy! I'm making the sweet bread to enjoy on Christmas morning!     Oh, thank you so very much for this video. My Dad ALWAYS made it and I always took advantage of his bread. Now I wish I had watched him. His recipe called for sweetened condensed milk also, And I wonder if this made it sweeter? I LOVED his and can't duplicate it :( So I'm going to try yours.       Don't know but they look like angel food cake pans. He uses 9" dia.(in recipe detail). Look around for something close.

    I have a question I made the sweet bread the first time and it came out so good , but the second time it took hours to rise I have in the oven on warm but I don’t know why this time is taking longer , can you tell me what I’m doing wrong

    Just found your channel and have been looking for an authentic Portuguese sweet bread. I used to buy them from Cornerstone Bakery in Fall River but I live in S Carolina now and to ship them costs way too much. Hopefully this one will be just as good. I am curious about the pans though. Looks like you are using pans that are bigger than 9 inch cake pans which seem too shallow. Did you purchase them from a kitchen store? Seems like the 9 inch ones would not work too well. I will probably cut the recipe in half to start out with. Thanks for sharing.
