I am from the south, and the best way to eat a ripe, in season peach is standing over the sink...to catch the juice!! We always buy enough to eat, bake with and freeze!

Love your recipes and always look at to your recipes. In case no one has already said it, there are two kinds of peaches. Freestone where the pit comes from and cling where it doesn't. I always try to buy freestone for obvious reasons but stores never know what type they are selling.

Can’t wait to make one. I like that you score peaches before blanching. I can them and this will make it so much easier to slice. I think too that the later peaches are better as they’re easier to remove the pit. I’m 80 and baking about 60 years and I still get helpful hints while watching your videos! Mmm!

That foil tent looks so much easier than trying to cover the edge with a strip of foil, which never works.

Hi John!! This peach 🍑 pie looks (and I bet….tastes!!) absolutely showstoppingly beautiful. I love delicious beautifully ripe peaches, you can’t beat them. I remember my daughter and I going out to the county (Leamington Ontario) specifically for peaches, we ate an entire basket of them on our 1hour drive home…such deliciousness and we were such little 🐷 Anyhow I love making peach pie, my recipe is pretty much the same, candy beat it.

You need to make sure you get Freestone peaches! Some come off easily, and others do not... as you discovered. 😉
