I have used peaches for pies for years much like the way you did in this video. I soften apple slices partially cooked and add them to the peaches then add raisins. Yum.
It’s late April and now I’m longing for summer peaches! When I was growing up we had several freestone peach trees in our yard and this video is talking me down Memory Lane. Every 4th of July we’d pull out the hand cranked ice cream maker and make fresh peach ice cream. Nothing like it!
This is the best pie recipe I've ever had! I made it just today and it was magnificent! And served with vanilla ice cream is the cherry on top of it being gorgeous, rustic, and absolutely delicious! I hope you guys get to enjoy making and eating thus peach pie, chao!
I messed up big time today while trying to make my peach pie. First, my peaches weren't ripe enough. Second, I didn't have any lemon juice, so I used lime juice. Third, I accidentally put cumin in there when I was trying to put cinnamon in there. There was no way to get the cumin out, so I just left it in there. Then I went ahead and put the cinnamon in there. Then I didn't have any nutmeg, so I left it out. I used a couple of frozen pie shells, but when I tried to flatten one out to cut into strips for the top, it turned into a mess. It's in the oven now. We'll see how it goes, but I suspect it would be inedible. It didn't smell very good with all that cumin in it. EDIT/UPDATE: This pie is actually pretty good. The fact that the peaches weren't ripe wasn't a problem. They softened up during the cooking, and they are delicious. It still has a smell of cumin, which is unpleasant, but the taste is barely noticeable. It could be better, but I'm fairly happy with this peach pie, and I 'spects I'll eat the whole thing by myself over the next three days or so.

A little advice for the crust, that looks good! Don’t add all that water, your dough is just a little too wet. And the water amount you use will vary from each time you make it. Having it a little firmer will make it easier to work with and help it look even better. Great video and recipe!
That looks fantastic! My pie crusts have always been hit and miss. I'm going to give yours a try. Although I gave up drinking years ago, (choice, not necessity), so I'm probably in for some sticker shock when I get a Mickey of vodka.
I think you should put butter, flour and shortening amounts in grams. Tablespoon is a pretty varied amount! Some are bigger than others, and is that heaped, or flat? Recipe looks nice though.👍🏼
Is it okay to use peaches that are firm but smell sweet? Also, can you convert the 3 lbs of peaches to approximate cups? I don't have a scale and they removed them from the grocery due to covid. Thank you in advance :)
What is the vodka for? You never really explained as I'm new to making pies I've done some research into different recipes and this is the first time I've seen vodka used in a pie crust
Good recipe, but I'd substitute several ingredients when the time comes for me to make one. For example: I would use 1 and a quarter cups of maple sugar, a third cup of date sugar, 2 tablespoons of pie spice, a spill of vanilla extract, some lemon juice, a generous quarter cup of tapioca flour and combine with fresh picked, ripened peaches and let the concoction sit in the fridge for a day; fermentation process. While waiting for the fermentation to complete, I can work on the pie crust; which takes me a LONG time despite using store brand premade dough sheets and then detail the crust for the altered crust for the pie shell; I have a large pie dish and chill it with a sheet of cling wrap and last, I put the filling in the shell and top it off with an oat and nut streusal before baking. I've done a blueberry that way and it tasted unimaginably delicious.

A couple of questions: (1) I've made really good peach pies but no matter what I do (blind bake, freeze the crust before baking, , coat inside bottom crust with egg or flour or breadcrumbs, etc.) it always seems to get soggy. Any suggestions for that? (2) What doe a slice of your pie look like? I have made very delicious peach pie FILLINGS but when I slice the pie and lift a wedge of it, it all falls apart - will not hold its shape. What about yours? Thank you!
Blind bake and then paint with egg yolk. Fill the pie with the filling and bake for the usual hour to hour and a half. You can bake fruit pies for a long time even when the crust is prebaked - just make sure you protect the edge of the crust with some foil so it doesn't burn.

The common brand of shortening in the USA is Crisco. It is made from vegetable fat like margarine is, but it is white somewhat like lard. I hope that helps.

@@SebastiansLeftGlove0731 from what I understood the vodka is there to keep the dough from getting too stiff, so in the event you roll it out too far and crack it, you can reform it into a ball and try again (which you can't do with pie crusts without something like vodka, which is a common cause-of-death for piecrusts made by newbies). If you're experienced you can omit it I think.
NP M I watched another video where they said placing your cookie sheet in the oven to preheat before sitting your pie on it helps cook the bottom of the pie crust

Corn starch usually clumps when you add it to liquid. I’d blend it with the brown sugar and spices first.

The alcohol affects gluten production in the dough. You can use any (most?) hard liquor. You can drink the pinot noir while you're baking.

Peaches grow to be different sizes so any number I told you would be a guess. Maybe somewhere between 9 and 12 peaches? Maybe more, maybe less.
