I love peaches! Just bought some. But I love custard, too so I can't wait to make this chess pie which I thought would be too fancy and hard to make, but as always, Chef John makes it easy!
I confess I've never had an issue with too many peaches in a peach pie. It is my favorite summer pie. I don't disagree with Chef John often, but this is one of those times.
Our family had a version We called "peach stuff": combine a cup of flour a little bit of salt in a stick of butter and press it in the bottom of the pan. Cover it with drained canned peaches, a cup of sugar and some cinnamon. Bake at 350 for 20 minutes. Then remove and pour on top a half a cup of the peach juice and 1 beaten egg and a can of evaporated milk. Bake for another 30 minutes. Just as good.
This sounds similar to a dolly Parton recipe i think!!! (but I could be totally wrong too, i cant remember😂)... (unless of course you and dolly are in the *same* family and I was actually totally spot on!!😁)
What a beautiful and delicious pie! The peach cream pie from Food Wishes seems to be the perfect combination of sweet and creamy. I loved the way you explained each step to ensure an amazing result. Congratulations on the fantastic recipe and impeccable presentation! ❤❤
This looks AMAZING, one of the most stunning delicious looking pies I've ever seen. Every pie/dessert i've made from you has been amazing and I'll definitely try this one out ASAP :)
Interesting take on chess pie. We still make my grandmother’s recipe, especially around the holidays. We often serve it with a scoop of vanilla ice cream. I think that would work just fine here.
I truly love the Summer fruits. Peaches, Nectarines, watermelon, mangoes, strawberries, blueberries, and cantaloupe are just too good to miss. I'd love to see Chef John pickle each of these wonderful kisses of sunshine. Especially Mangoes. They don't get enough appreciation.
I'm so glad he picked it up and just took a bite out of the whole piece like a piece of pizza cuz the whole time he was cutting it with the fork I was just thinking pick it up and eat it😂❤
What a recipe delight! The peach Custard pie looks irresistible and the combination of flavors should be fantastic. I loved the way you explained each step, making the recipe easy to follow. Congratulations on the wonderful video and the recipe that will surely please everyone! ❤❤
I make this pie for years, with peeled cut up in small pieces of 🍑 instead of slices, also can be done cobbler style ~ Auntie’s A peach chess pie & huckleberry chess 😍
I made this recipe. And although I think the recipe called for 2 peaches, I used 1 more, and made the custard at 1 1/2 times the recipe called for, and the result was excellent. Chef John, you are amazing. This is a really good Pie. And super easy to make.
If you don't have pie weights pennies work great. They conduct the heat to the crust and help with the browning. And speaking of evenly spaced that would describe me in the 70's.
Chess pie is a personal favorite of mine. Easy to make, needs no mixer, and all the ingredients are usually on hand. The peaches are a nice variation, but don't neglect to try the pie without them. If you've never had chess pie, with or without lemon juice added, you've missed a treat.
I love these desert recipes. I wonder if adding the tiniest bit of apricot, peach, or orange extract...or rosewater. Just a tiny amount. And/or maybe some nutmeg
This is my first fail for a pie. I was so excited to bake it. My son bought fresh peaches on the same day that I watched the video. Obvousily I missread the recipe. As I was doing my mise en place, I read 1 cup of white vinegar and 1 cup of white sugar. so when all my ingredients were ready. I started the mixing. adding my white vinegar to the mix. bake the pie. let it rest in the fridge and served it after diner. My son said what the heck. what have you put in it. tasting like vinegar. So i tested it. Beurk what a fail. Next time I will take my time to read carefully the recipe. I will have to try again. Lesson learned Thank you Chef John.
Im always looking forward to the next video, theae recipes are better than Bobby Flay and all the rest. Especially the deserts! I have several i make several times a year. 😋🤤
When Chef John said the enthusiastic whisking burned off exactly the same number of calories as one slice of pie I thought "imagine having the iron will to stop at one slice." And then Chef John made up an excuse to have two.
since the base pie here is chess pie, not peach pie, it's worth a shot. I can't see it working poorly unless you happen to dislike the fruit you chose.
If I were to use a frozen, ready made pie crust, should I still use the weights and pre-bake the crust? The peaches ended up at top of the pie. If were to. cut the pieces smaller, would they settle throughout the pie or still rise up to the top?
The peaches will rise to the top. If u use too many peaches your pie won’t set up firmly. Too much moisture from the peaches. You could always heat up some extra slices of peaches and brown sugar ( and spices if u want). Cook on the stove top and then chill this extra peachy goodness in the fridge while the pie cools down. Good luck! This looks SO Delicious!
@@karenroot450 Thanks! And, if I used the same exact amount of peaches but cut them smaller, I imagine they'd rise up to the top like the Chef's larger cut pieces.
Chef John, my mom has been making this pie since the early '60's when she learned how to do it from her neighbor, the elderly Mrs. Billard, in Richmond, Virginia. However, she doesn't use corn meal. I can't imagine what kind of texture that would impart. Is it gritty? Or does it soften like polenta? Also, lemon juice is probably better than vinegar because it blends with the peach flavor better. Finally, Mrs. Billard used nutmeg also in the batter.
Let the pie cool. Then it will be “set”. If baked correctly. If it isn’t set set and you cut a piece out. The rest of that custardy, hot pie will turn into runny goo in your pie pan. So just let it cool completely. The custard will firm up. It probably also does taste better cold. At least that’s my guess.
@@saltycrow Thanks. I’m going to have to listen to it again. When he said it he had just cut the peaches so that might be why I missed that he was talking about after baking.
the problem i have with peaches is that i cant stop taste testing them all the way till baking, and i end up baking a diy deep dish hard crust pizza instead
Last week I went to the grocery store looking for peach cobbler, but all they had was peach pie. When I cut into it, it was an apple pie. I was so distressed.
Every time Chef John says "Just a touch of....." I hear the dump truck backup alarm going off.

buffalo sauce?
ice cream?
All these years and Chef John has never let a dish properly cool before digging in 😮

On the other hand, this still sounds like a delicious pie to make if you are short on peaches!
@@annbrookens945 Yes if you like custard pies.
An easy solution is a good serving of sliced peaches on the side.

Ohhhh I’d love to try this with a shortbread cookie crust 🤤 that sounds delicious 😋 I love peaches and peach flavored things. Thanks chef John!
