I got an epic tip from the guy at the cheese counter. You know the greasy pizza you get from that cheap pizza joint? It's because they cooked it at a way high temp in order to make it faster, and that breaks down the cheese and "sweats" the oils. In a grilled cheese you don't want it all oily, so the secret is (like many other foods) low and slow. You turn it down to low or medium low at most and cover the pan with a lid. The cook time goes up, but it's way harder to overcook it if you get a bit distracted, and the cheese pull is amazing. You also can get more cheese and other toppings loaded in there with this method, because even if you stack it up, the cheese will melt long before the bread would blacken if cooking without a lid at medium heat. If you overfill it and it starts oozing out, don't worry, you'll get extra crunchy goodness from a bit of overflowing fried cheese. One thing my wife loves is to sprinkle a little extra cheese on top after you flip it. Again, the low heat and lid will ensure that by the time it's done all the sprinkled cheese on top will be melted as well. Trust me, you gotta try it.

How often do you talk to people about the type of butter/oil they use for toasting bread? Mayo is a very common spread for toasting bread, especially grilled cheese, mostly for the different flavor - which some don't like - and it crisps up the bread much more in my opinion. The "experiment" in the video obviously was not a good test as mayo has a completely different consistency and makeup than butter, and shouldn't be cooked the same way.

"It's pronounced: howda" I'm glad to have finally found someone who doesn't say "gooda". Sadly it's pronounced more like "gowda", but it's close enough.
Well, I think it's because of the origin... the "grilled" isn't to describe HOW it was made, but the origin of how it was created... a homage, honoring it's ancestor... plus fried sandwiches already exist
I most enjoy videos of people actually sticking to the definition of grilled cheese, as too many are actually making grilled sandwiches which 'contain' cheese. There is that line, yes. Cheese is the star of the show here, and adding other stuff takes away from it. That said, of course you can add seasonings or other flavours like bacon bits. Even a nice sauce on the side for dipping. Personally, I like spicy cheese for a nice kick. When I make grilled cheese, I personally use sourdough bread, mozza or spicy chedder cheese, butter, and a light sprinkle of salt and thyme on the outside. The after product is both amazing and stays near the core of grilled cheese without being too basic. The sourdough adds extra flavour, rather than being a mere 'typical bread flavour'. Both the processed and non processed (mostly) versions of grilled cheese are amazing. The processed version is definitely more nostalgic.
i made a grilled cheese with homemade seeded wholegrain bread, spring onions fried first with lots of salt and a mix of grated english cheddar and some shop-bought grated mozzerella and it was really good

Lord Frida you don’t actually need the water, just cover the pan, and the heat will do. Less risk of water touching the bread making it soggy. There is also another trick where you cut the grilled cheese in half 1-2 minutes before it is done
0:53 You should try using olive oil mixed with butter. (I use the same amount of each, but it could be good with other ratios, as well.) You can either use softened butter -- or melt the butter & chill the mix in the fridge. If melted, you'll want to come back after it's somewhat solidified, but not too hard & mix it together. After the butter & oil are combined, they will stay mixed if kept chilled, and it's a lot softer than butter, so it's easy to use straight from the fridge. I like to use this combo seasoned with spices like dried garlic or garlic salt, onion, basil, pepper, & parsley for garlic bread & on a lot of foods. You can make different flavors with whatever spices you prefer.

The way I make my grilled cheese is very similar to your sourdough one. I use sourdough, gouda, smoked cheddar and then Peccorini or parm encrusted on the bread!! Sooo good.
it’s the best grilled cheese bread and it’s not even close. i also don’t agree with him on the American cheese, it melts better because it contains emulsifying salts, and if you put a piece of american between two other types of better cheese, it will help them melt instead of hardening once you take them off the heat. I think the mistakes with grilled cheese are often just trying to hard; too many toppings, using WAY to rich flavored cheeses, too greasy. this is why I hate grilled cheese at restaurants and would much rather make my own. pickles are amazing on them but that’s as much as i’ll usually add. keep it simple with a good quality not-too-rich cheddar, one slice of american in between, and then a third slice of something more interesting like gouda, munster, pepperjack, etc. but something more medium and not ultra sharp/rich

My favorite grilled cheese involves adding minced garlic and dried rosemary to it. So good. Would the apple one work if the apples were cooked all the way through or would it be too mushy? I'm allergic to apples unless they're fully cooked
It's so sweet how most English speakers try so hard to pronounce it right when trying to pronounce Dutch words. We weten allemaal dat Nederlands sowiso een belachelijk moeilijke taal is om te leren spreken wanneer het niet je moedertaal is 🤷
Gouda is already wrong as it is 'Goudse' kaas. Goudse is the adjective form of Gouda (a city in the Netherlands). Technically it doesn't signify the place where it was made, but rather the place it was traded and mainly marks a method and a standard (so it's not geographically protected). Howda is pretty close. The g forms when you raise the back of the tongue little more to make the space the air has to go through smaller. Which is close to a choking sound, the Dutch 'hard G', differentiating it from a 'soft G' found in some dialects. Essentially, the H is the closest mouthshape, close enough to mimic some Dutch dialects.
For me, it's italian bread, colby jack, the inside of the bread (not on the pan) with a coating of creme fraiche, outside coated in unsalted butter. Cook that and then dip in tomato basil soup for each bite. So good. I will try out your triple cheese combo next time though!
3:45 - Dutchie here, it's actually pronounced "GGGouda" the 'G' is almost the same as the Spanish 'J', like "Jalapeño". Nevertheless, great content dude, you got yourself a new subscriber!
"You don't want anything going soft earlier than you expect it to." Please. This is a cooking channel, and we've _all_ forgotten to let our butter get to room temperature before.
I like to use the mixed butter and olive oil spread personally. I also put the butter in the pan instead of on the bread. I get the butter all spread out in the pan and let it heat up till all of the water is evaporated, I then take sammich and plop in into the pan. As soon the the bread hits the pan you move it around a bit to make sure that the bread soaks up all of the buttery goodness. The bread gets perfectly toasted and it's just hands down my favorite way to do it.
Ive always considered asbestos hands like "oh i can hold mildly hot stuff without getting irritated" not "i caN TOUCH SIZZLING BUTTER AND NOT GIVE A DAMN"
@@celinaroberts5438 Much appreciated! After looking up a couple of videos on the Dutch pronunciation of 'g,' it makes sense. I took German classes, many years ago, and have since thought Dutch to be similar, but never connected 'g,' and 'ch' to be the same until seeing Dutch & Go's video just now. 🤦 I wish I had made the connection in class. But my teacher wasn't strict on pronunciation. It sounded like German has a lot of regional variations.
My process is quite different. I found oil (I use avocado) makes it more cwispy than both mayo and butter, and it's healthier. One may argue butter is required on a grilled cheese but I think it's what's on the inside that counts. I oil up my sourdough. On the other side I put mayo, not to toast it, but I found it mixed with the cheese very nicely and gives it more flavor. I use your old classic find at Aldi's Mexican style shredded cheese. Whatever is in that. I then shred up a bit of andouille sausage onto it, not raw of course. Just yesterday I cooked up some maple bacon and found that added to it greatly. The texture of the bacon mixed with it and the flavor of it. Then I got the pan on medium high, because the cheese melts pretty fast, faster than the bread is toasted sometimes, then just give it some time. When putting the sandwich on there if I spill any cheese I put it onto the cheese and it gives it a little taste. I like to press it down a little and get some of the mayo outta the holes. So you still get a bit of mayo on the outside. Pressing it down also gives it a really unique texture because the bread is flatter. so yeah cook that and flip it until it gets a few black parts. Not too much but it definitely doesn't hurt it. You could of course season it further but, I think it's really nice and simple. Mayo with some mexican four cheese blend with andouille sausage and maple bacon on oiled toast instead of butter or mayo. It's great.
I just realized that this dude makes his own bread, his own butter... and his own cheese. So, if you wanna go as extra as it gets on your grilled cheese then you found the right person
When he tried to sound nerdy by telling people that Gouda is pronounced houda was so funny. It's not an H sound, it's a [ˈɣ] which is a voiced velar fricative, while h sound is a breathy voices glottal fricative.
i make mine almost like the 2nd option, but take shredded mozzarala and cheddar mixed directly onto the pan(non-stick of course) and make sure one side of the cheese gets a little crust, then i slap a piece of bread atop it, and flip to toast the bread, and just add a little cheese to the cheese crust to act as a glue for the 2nd piece, and the reason you want a crust on the cheese is you get a little bit of that browned cheese flavour in it, which adds a whole new depth to it.

I confound you: try tomato paste (double concentrated from a tube, I use Cento) and creme fraiche on the *inside* of your grilled cheese. White cheddar and torn whole milk fresh mozzarella were my cheese's of choice but that's obviously subjective. Need to experiment with different breads
Little tip if you want to melt the cheese a little faster. take about 2 tsp of water and put it in the pan. then cover it, the steam of the water will melt the cheese. Very nice and handy way to ensure your cheese is fully melted.

This case is America-specific.
It's called a cheese toastie where I'm from
Hayley C lol but it’s not put in a toaster...
Vivian Ju but it still gets toasted
Well, I think it's because of the origin... the "grilled" isn't to describe HOW it was made, but the origin of how it was created... a homage, honoring it's ancestor... plus fried sandwiches already exist
Who are these barbarians who put mayo on toast?

Its oil, eggs, vinegar, and seasoning. What's the problem!
Aioli which uses lemon juice instead of vinegar is better of course

I don't care who says it's better, mayo is disgusting to me
I most enjoy videos of people actually sticking to the definition of grilled cheese, as too many are actually making grilled sandwiches which 'contain' cheese.

What if the water touches the bread? Won't it become soggy?
Mauz i put on the side where it doesn’t touch the bread i’m super strict about it if the water touches the bread i will not eat i will throw it away and restart it might be ocd
Lord Frida you don’t actually need the water, just cover the pan, and the heat will do. Less risk of water touching the bread making it soggy. There is also another trick where you cut the grilled cheese in half 1-2 minutes before it is done
0:53 You should try using olive oil mixed with butter. (I use the same amount of each, but it could be good with other ratios, as well.)
You can either use softened butter -- or melt the butter & chill the mix in the fridge.
So I actually use butter AND mayo. I put the mayo on the inside and butter the outside. Idk I just like it.
Peony Plays sameeeeee !!!!!
That sounds odd tbh

I do the opposite. Makes it super crispy. Need to use kewpie mayo tho. That's key.

Best grilled cheese ive had in my life
I call it what i want!!
The way I make my grilled cheese is very similar to your sourdough one. I use sourdough, gouda, smoked cheddar and then Peccorini or parm encrusted on the bread!! Sooo good.
If you want to try a real god tier grilled chesse you've gotta try using Texas Toast instead of regular bread.
That's going straight to the top of my list!
it’s the best grilled cheese bread and it’s not even close. i also don’t agree with him on the American cheese, it melts better because it contains emulsifying salts, and if you put a piece of american between two other types of better cheese, it will help them melt instead of hardening once you take them off the heat.

“It’s pronounced howda”
Excuse me no it isn’t
I will give him props for pronouncing the word basically right just forgetting the G, but yeah

It's so sweet how most English speakers try so hard to pronounce it right when trying to pronounce Dutch words. We weten allemaal dat Nederlands sowiso een belachelijk moeilijke taal is om te leren spreken wanneer het niet je moedertaal is 🤷
I’m from the Netherlands so it’s always really funny to hear people pronounce “Gouda”😂
It's supposed to be "how-duh", isn't it?
@@waaahl how-dah is more like it. And a hard G is mandatory, but I don't know how to explain that.
Benjamin W Just say it with a hard g and the ou like the ou in ouch
G as in God, ou as in ouch, da as in dark.
that's what I would say
That “CWISPY” didn’t even make me laugh, I just... vibe to that.
Edit: To clarify: The first, emphasized on screen, “CWISPY”
For me, it's italian bread, colby jack, the inside of the bread (not on the pan) with a coating of creme fraiche, outside coated in unsalted butter. Cook that and then dip in tomato basil soup for each bite. So good. I will try out your triple cheese combo next time though!

"You don't want anything going soft earlier than you expect it to."
Please.
Gouda is a Dutch word so jokes on you Americans nobody can pronounce our 'g' sound corrertly

@@celinaroberts5438 Much appreciated! After looking up a couple of videos on the Dutch pronunciation of 'g,' it makes sense.

I wish I had made the connection in class. But my teacher wasn't strict on pronunciation. It sounded like German has a lot of regional variations.
Scientific studies show that sandwich’s flavour increments in a 110% when it’s cut diagonal
Cami Di Marco can confirm
Finally, someone else who hates mayo toast as much as I do.
i make mine almost like the 2nd option, but take shredded mozzarala and cheddar mixed directly onto the pan(non-stick of course) and make sure one side of the cheese gets a little crust, then i slap a piece of bread atop it, and flip to toast the bread, and just add a little cheese to the cheese crust to act as a glue for the 2nd piece, and the reason you want a crust on the cheese is you get a little bit of that browned cheese flavour in it, which adds a whole new depth to it.
