Despite putting the paste in an airtight glass container & kept in the fridge the ginger paste goes bad. It gets a small layer of greenish something on the top. Then I have to throw it out. Why does it happen?
I have been making ginger garlic paste regularly. Just sharing my way, if it helps someone . Ginger - garlic ratio would be 40-60 ratio. Add chopped ginger, garlic , 1 tablespoon of sunflower oil, 1 tsp of salt and a little turmeric. Grind well ( without a drop of water ) Store in a glass container and use a fresh spoon each time . You can even make 2 portions - one for the fridge and one for the freezer ( if you have no time to make often) There will be no change in smell , colour or flavour for upto 3 weeks .

Adding oil. Turmeric n salt.. Preserves it nicely. I give my daughter the same.. Home away home❤
I was told while grinding to add oil but this way seems better 😊
I add salt, but also some oil to each paste.
