I cooked the curry yesterday and it was simply amazing. My wife commented that it was possibly the best fish curry she had eaten. The depth of flavour was amazing and I am certain that it is down to the process of cooking the spices and then the reduction of the excess liquid . We are regular viewers now. I intend to make some of your masala sauce base to freeze and will be cooking some of your other recipes very soon. The mutton curry looks incredible. Keep up the good work and thank you again. A dear indian friend gave me a similar recipe many years ago, but without water, just with a little oil, or kokonut milk HER TIP: for a longer durability freeze portions in the ICE CUBE TRAY! That's how I've been doing it for many years, because we don't eat Indian every week. Thanks for your great recipes!!

I made a batch of this with my 3 year old son. It turned out great and I've frozen it in to cubes for future use. I used it to make your Tarka Dahl recipe. It was too delicious. Thank you so much for sharing this! So much better and cheaper than buying garlic and ginger paste jars... Incredible!

Absolutely fab latif a totally different to just using ground garlic and ginger it must give a different taste to your curry when your building the layers.I have just started to watch your videos, would you please do a video on a mutton curry because some people say you boil it with garlic ginger chilli and onions,but no oil, some people say you put everything in at the beginning oil as well, latif would you please do a video showing which way is right please 👍
That's why the garlic/ginger paste is green. I thought it was due to oxidation.... Will try this when I get to go to the shops later this week. Thank you Latif x

Unfortunately no matter how many dishes I’ve tried it in I just can’t do lamb! 🤢 I’m on southern Ontario and recently my favourite place (the only place that made them this way) that made fish pakoras mysteriously closed to my ultimate dismay! Any chance you could do a video on that?
You can also use the roots of coriander, they're even more flavourful than the stalks. You have to grow your own or buy from a market stall for that though, you'll never find it with the roots attached in the supermarket
Wow Latif, can’t wait to try this! In the part of France I live in it so hard to get a good curry. COVID-19 killed a newly opened perfect restaurant in the next town back in March. I’ve been following your videos for the last few months and love them. So informative and fun to try to copy your obvious perfection. Although I can get close to the taste I like it won’t stop me going to a good restaurant (if one opens again) close to me. Right now I need to travel 35km to the closest. Thanks for sharing and looking forward to your book 😉
