  • Sheet Pan Festive Gnocchi
    Serves 4 | Prep 5 Mins | Cook 15 Mins
    Makes 8 | Prep 15 Mins | Cooking 30 Mins
    Ingredients:
    2 x 400g pkts Coles Festive Gnocchi
    2 x 200g punnets Red Perino Tomatoes
    ¼ cup (60ml) Coles Extra Virgin Olive Oil
    ⅔ cup (180g) Cucina Matese Basil Pesto
    12 cherry bocconcini, torn
    Fresh basil leaves, to serve
    Finely grated Coles Parmesan, to serve
    Method:
    1. Preheat oven to 220C. Arrange gnocchi and tomato on the tray. Drizzle with 2 tablespoons of the oil, toss to coat. Season. Bake for 15 mins or until gnocchi is tender.
    2. Meanwhile, combine pesto and remaining olive oil in a small bowl.
    3. Add bocconcini to the gnocchi mixture and drizzle with the pesto mixture. Sprinkle with basil leaves and parmesan, to serve.
