    Serves 4 | Prep 10 mins (+ 10 mins cooling time) | Cooking 25 mins
    Ingredients:
    500g Cucina Matese Pasta Mafalde Corte
    1 tbs Coles Extra Virgin Olive Oil
    1 brown onion, finely chopped
    2 garlic cloves, crushed
    1 bunch Coles Australian Broccolini Family Pack, chopped
    1 zucchini, thinly sliced
    1 bunch Coles Australian Green Kale, leaves trimmed, chopped
    100g snow peas, trimmed, chopped
    ½ cup (120g) Coles Smooth Ricotta
    ½ cup (40g) finely grated Coles Parmigiano Reggiano
    Parmesan crumb
    1 tbs Coles Extra Virgin Olive Oil
    ½ cup (35g) Coles Asia Panko Crumbs
    ½ cup (40g) finely grated Coles Parmigiano Reggiano
    ¼ tsp Coles Chilli Flakes (optional)
    Method:
    1. Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving 1 cup (125ml) cooking liquid.
    2. Meanwhile, heat oil in a medium frying pan over high heat. Add the onion and cook, stirring, for 3 mins or until softened. Add garlic and stir for 1 min or until aromatic. Add broccolini and zucchini and cook, stirring, for 5 mins or until tender. Add kale and snow peas and cook, stirring, for 5 mins or until snow peas are tender and kale is wilted. Set aside for 10 mins to cool slightly.
    3. To make the parmesan crumb, heat the oil in a small frying pan over high heat. Add the panko crumbs, parmesan and chilli, if using, and cook, stirring, for 3 mins or until the panko crumbs are golden and crisp.
    4. Transfer cooled vegetable mixture to a blender or food processor. Add ricotta, parmesan and the reserved pasta water. Season and blend or process until almost smooth.
    5. Return the vegetable mixture to the frying pan. Add the pasta and toss to coat. Divide among serving bowls and sprinkle with parmesan crumb to serve.
