  • Chicken & mango salad with peri peri dressing
    Serves 4 | Prep 15 mins | Cooking 5 mins
    Ingredients:
    2 mangoes, stoned, peeled, cut into wedges
    1 Coles Hot Roast RSPCA Approved Chicken, skin and bones removed
    ½ cup (125ml) peri peri mayonnaise
    1 cup coarsely chopped coriander
    300g pkt Coles Kitchen Fine Cut Coleslaw
    Method:
    1. Heat a greased barbecue grill or chargrill on medium high. Cook mango, cut-sides down, for 2-3 mins each side or until lightly charred.
    2. Use 2 forks to coarsely shred the chicken. Combine the mayonnaise, coriander, chicken and coleslaw in a large bowl. Season.
    3. Place chicken mixture on a platter. Top with mango and season to serve.
    Smart swap: Replace the whole roast chicken with any leftover chicken pieces or even cooked prawns.
