  • Crispy fetta pockets with honey & thyme
    Makes 8 | Prep 15 mins | Cooking 20 mins
    Ingredients:
    200g Coles Dairy Australian Style Fetta Cheese
    4 sheets filo pastry
    1 tbs thyme leaves
    30g Coles Australian Salted Butter, melted
    2 tbs Coles Extra Virgin Olive Oil
    2 tbs Coles Pure Australian Honey
    ½ tsp Coles Chilli Flakes (optional)
    ½ tsp Coles White Sesame Seeds, toasted
    Thyme leaves, extra, to serve
    Method:
    1. Preheat oven to 180°C. Line a baking tray with baking paper. Cut fetta into 8 even pieces and pat dry with paper towel.
    2. Place 1 sheet of pastry on a clean work surface (cover the remaining sheets with a tea towel to avoid drying out). Brush with a little melted butter and sprinkle with some thyme leaves. Fold in half crossways and cut in half lengthways. Place 1 piece of fetta on each pastry half. Fold pastry to enclose fetta. Repeat with remaining pastry sheets, butter, thyme leaves and fetta.
    4. Heat oil in a medium non-stick frying pan over medium heat. Cook the filo pockets, in 2 batches, for 1-2 mins each side or until light golden. Place pockets on the prepared baking tray and bake for 8 mins or until crisp and heated through.
    5. Arrange the filo pockets on a serving plate. Drizzle with the honey and sprinkle with chilli flakes, if using, sesame seeds and extra thyme leaves to serve.
