  • Gingerbread No-Fry Ice Cream
    Makes 4 |Prep 10 mins (+ freezing time)
    Ingredients:
    1 litre Coles Burnt Butter Pecan & Caramel Swirl Ice Cream
    6 Coles Bakery Gingerbread Biscuits
    1/2 cup (20g) Coles Corn Flakes
    Coles Salted Caramel Sauce, to serve
    Coles Christmas Chocolate Dipped Biscuits, to serve
    Whipped dairy topping cream, to serve
    2 fresh cherries, to serve
    Method:
    1. Divide ice cream evenly into quarters. Roll into balls. Place on a baking paper lined tray and freeze for 1 hour or until firm.
    2. Blend or process gingerbread and corn flakes until coarsely ground. Transfer to a plate.
    3. Roll ice cream balls in crumb mixture pressing to stick. Serve ice cream sprinkled with a little extra crumb, drizzle 2 balls with caramel sauce and top with biscuits and serve remaining two balls with whipped cream and cherries.
