- Loaded chicken caesar schnitty
Serves 4 | Prep 15 mins | Cooking 20 mins
Ingredients:
4 (about 1.4kg) Coles RSPCA Approved Chicken Breast Fillets
1/2 cup (75g) plain flour
2 eggs, lightly whisked
1 1/2 cups (105g) Coles Panko Crumbs
Coles Extra Virgin Olive Oil, to shallow-fry
550g pkt Coles Special Burger Slaw Salad Kit
1/3 cup (65g) Coles Special Burger Pickles, drained
Method:
1. Place 1 piece of chicken between 2 pieces of plastic wrap or baking paper. Use a meat mallet or rolling pin to gently pound until 2cm thick. Repeat with the remaining chicken. Place the flour, egg and panko crumbs in separate shallow bowls. Coat each piece of chicken in flour, shaking off excess. Dip in the egg, then in the crumbs, pressing firmly to coat. Place on a plate.
2. Add enough oil to a large frying pan to come 1cm up the side of the pan. Heat over medium-high heat. Cook the chicken, in batches, for 4-5 mins each side or until golden brown and cooked through. Transfer to a large baking tray. Cover with foil to keep warm.
3. Reserve half the sauce from the salad kit. Combine the slaw and remaining sauce from the salad kit in a large bowl. Divide the schnitzels among serving plates and top with the slaw and pickles. Drizzle over the reserved sauce to serve.
