Here are two tips from someone who has been making baked mac for over a decade. One, you don't really need to shred the cheese. Once you have your sauce liquid warm, just slice off small pieces from the block and toss them in. Two, you can add some gruyere cheese, in a 1:4 ratio to the cheddar which will give it a more unique flavor. So that's not actually Southern style, but a twist on it. I have never tried using the Velveeta.
So, I made this...and it was incredible. A friend of mine said it was the best Mac & Cheese she ever had in her life. Awesome. But when I made it, I realized that I didn't have enough bacon. So I mixed bacon with hot breakfast sausage and it turned out AMAZING. Thanks guys. This past year has sucked in so many ways, but your show is one of the things I genuinely look forward to now. Must use extra sharp and highly recommend adding some Colby Jack for more flavor. You can also dump all the raw ingredients (still boil noodles or use the no-boil baking version) into a crock pot for 3-4 hours on low and let it slowly come together and fill your house with the cheese aroma.
Being a Mexican American from the southwest part of the country, this is also very similar to how we make make and cheese. One major thing I do differently is sprinkle some shredded (or diced) jalapeño or cerrano pepper on mine before I eat. Not only for a splash of color but a bit of heat as well.

There's nothing wrong with pre-shredded cheese. It does dry out faster than block cheese because it has more surface area, but just use it before it dries out.
The only thing you’re missing is a little paprika over the top! Otherwise it looks amazing!! If you brought that to the house here in Birmingham we wouldn’t kick ya out!

It’s all in the vacuum packaging for Velveeta. Plus, it’s what’s called shelf stable and doesn’t need to be refrigerated. It’s very high in sodium and fat. That’s what makes it sooooo good.

You should always shred your own cheese from the block when making mac and cheese, or any cheese based sauce.( Its fine if you are just melting it on the top) The pre shredded cheese has a powder to keep all the pieces from sticking together. That powder will ruin your cheese sauce.

I, usually, end up chopping the cheese up with my knife. It's fast, less dangerous, and much easier to clean up. Plus, it works. I've gotten good at cutting down to pieces that melt well. :/. I absolutely hate shredders, and I'm not fond of paying so much for pre shredded cheese. Plus, I like having more options for what kinds of cheese I use.

As a resident of Alabama, this recipe is pretty close, but you'd need to make a roux and add the cheese and milk/egg mixture to the roux(for a silky smooth cheese sauce), before adding it to the cooked noodles. Also, it's missing a metric f*ck ton of seasoning, lol. toss in some smoked paprika, oregano, cayenne pepper, etc. Your life will be changed forever, with the real baked mac.

That looks yummy! As a southerner baked mac and cheese is my favorite. I grew up making it with evaporated milk, imstead of regular milk and a sprinkle of paprika on top before baking. Also never used Velveeta in baked version, only stovetop. Funny thing is I just bought the ingredie ts to male baked mac and cjeesw for supper one night this coming week and I came across this video!

Being a Georgia boy that's what I ate at my grandmother's house every Sunday. Although your recipe wasn't even close to what we know as mac and cheese. Still sounds great. My wife finally learned her recipe, but she has the diabeetus, so I don't know if I'll ever get it again.
The reason cooks avoid pre-shredded cheese is often it is coated with starch to prevent clumping. This coats each "shred" of cheese and makes keeps them from melting cohesively. That's why often the cheese on frozen pizza stays in individual shreds and never properly melts and softens. I would say if you can find pre-shredded cheese that does not contain starch or other additives, go for it.
Max’s use of “That’s what she said,” isn’t *too* much. Y’all are too sensitive. 😂 There are times where he blatantly missed the opportunity to use it though. I find myself saying it during certain episodes, and I’m like, “OMG, Max. Did you really miss that opportunity?” 😂 Maybe every episode is too much... and maybe I’m too immature, but I say keep it up. I just wanna say you are so right about cast iron. I was digging in my mom's yard and about three feet down I found an old skillet, easily over a hundred years old. It took me almost a year to get it back to working condition and now I have a cast iron. It doesn't look good but works. Seasoned with black strap molasses. One day I'll get a new one but for now I love it

After adding salt to your egg mix, wait 15 minutes for the salt to fully dissolve. You will see and taste the difference. It fluffs up like pancakes. You're gonna love it.

Absolutely great. I added some diced green chilies to kick it up a little. Also used Tony Chachere creole seasoning in place of salt.

I just wanna say you are so right about cast iron. I was digging in my mom's yard and about three feet down I found an old skillet, easily over a hundred years old. It took me almost a year to get it back to working condition and now I have a cast iron. It doesn't look good but works. Seasoned with black strap molasses. One day I'll get a new one but for now I love it

True southern doesn’t usually have bacon pieces. Needs ground mustard, sometimes a little cayenne. Still looks good ! Thank you for not ruining it with breadcrumbs 😆😄

After adding salt to your egg mix, wait 15 minutes for the salt to fully dissolve. You will see and taste the difference. It fluffs up like pancakes. You're gonna love it.
