    A floating island is a French dessert which consists of meringue floating on crème anglaise (vanilla custard). The meringue is prepared from a whipped egg whites mixture and baked in a bain-marie. The crème anglaise is prepared with the egg yolks, vanilla, and hot milk, and cooked. Floating island dessert is an easy fun french dessert recipe made of a decadent vanilla custard with a poached meringue floating on top.

    Ingredients for making îles flottantes (Œufs à la neige) French dessert:
    1 whole vanilla bean
    2 cups whole milk
    6 large eggs, separated
    1 1/3 cups of sugar
    1 tsp lemon juice
    1 tsp water
    Instructions for making a Floating Island (Iles Flottantes recipe for beginners):
    First scrap out the seeds from your vanilla bean
    Then put a small pot on low heat
    Add your whole milk to the pot
    Now add in your scrapped vanilla
    In a small bowl add your egg whites
    Whisk the eggs whites until they become frothy
    Now add in your sugar to the bowl
    Whisk again thoroughly until stiff peaks form
    Now make meringue canals with your egg whites mix, as shown in the video
    Once cooked, take your meringue canals out of the pan and let cool
    Place the meringue canals in the fridge for now
    Now strain the milk into a contain of 2 cups
    Add that milk to the stove over medium heat
    In a small bowl, whisk your egg yolks
    Add in your sugar to the mix
    Now whisk everything together
    Now slowly add in your milk while whisking
    Return the whole mixture into the sauce pan over medium heat
    Now strain the mixture to get the lumps out
    Cover with saran wrap and cool
    Now in a sauce pan add your lemon juice
    Followed by a splash of water and your sugar
    Bring up to a boil without stirring until it becomes golden brown
    In a shallow serving bowl adda ladle of your milk mixture
    Now add your meringue canals on top
    Top with your caramel sauce and your îles flottantes is ready to serve!
