I like the new video style, but I also like the former ones as well. I am content either way. I would not like them to be too terribly rushed as that makes it less enjoyable. This video was not too rushed, so I feel it was just right with pacing.
A cool tip I’ve seen and tried as well. If you don’t have a torch or a broiler, you can burn some sugar in a sauce pan until it turns that golden brown color and pour it over the cold crème brûlée. This topping is much thicker than the torch method but it looks very cool because it’s glass-like. Something to try if you don’t want to invest in a torch.

I'm 68 and honestly, if I had to feed myself, I'd have a hard time finding the door to the kitchen let alone knowing what to do after I entered. in my professional experience we used shallow ramekins so that the ratio of crust to custard was higher...for pots de creme and panna cotta a regular deeper ramekin is better...also if using whole beans then a one hr steep is needed...ditto for cinnamon or lemon grass etc

Love all your recepies. Last week I made Panna Cotta and it came out great. I make Dutch Baby all the time, but I always make the batter in the blender and heat the pan on top of the stove with 3 tablespoon of butter and add sliced bananas all over the pan bottom. cook for 2 minutes, sprinkle with cinnamon and add the batter.Then put in the oven. You can use sliced apples also.

I actually watched all the way through when I usually lose attention and skip forward or click away. The edits were fun and the script was entertaining. Of course the food was amazing and the editing kept my attention long enough to see how amazing the food was.

I broil the sugar works well. Or take impression on parchment of the dish fill it with sugar broil until done then slip onto the crème brûlée
