The pressure in the pot pushes out which pushes the pressure indicator up until you release the pressure, and the indicator drops because there is no more pressure in the pot.
Also - the reason the little silver thing goes down instead of up is because it's a pressure seal indicator. The pressure inside the cooker, pushing outwards, is what pushes the little pin up. You know it's safe to open when the pin goes down because you know there's not enough pressure to push it up. I know nobody asked.
Beat me to the explanation. The Instant Pot seems to be the one kitchen device my spouse is comfortable cooking in, the recipe books out there are effective for those lacking culinary creativity.

Hi Sam, that beef stew looks absolutely delicious...I will have to try that soon. I noticed you're having problems with flies...a little tip get some little organza bags (sold at Michael's or Hobby Lobby) and put whole cloves and crushed pieces of bay leaves, it should help ...flies don't like it. Hang them around the set. Really enjoy watching the program and trying your recipes, thanks!

OMG I made this recipe last night and everyone LOVED it! I just wanted to thank you for making the Insta-Pot less scary to me. We bought ours 5 years ago and this was the first time I actually used it. (hangs head) So, thank you Sam for the wonderful, easy, delicious recipe for me to use it for my first step into cooking with it. We love all of your videos and often watch at least one, if not more, a night. You've gotten me back into the kitchen to make food at home. Thank you, thank you, thank you.
Here's my tip for browning the meat, I (after cutting into cube's) I put them in the microwave for about 90 seconds to 2 minutes, then the meat is already warm to mildly hot, they brown up much easier on the grill, in skillet & in the instant pot.. Thank you for sharing.. I always love the "Bloopers" part in the end of your video's.. I've been cooking since I was very young (Grandma Taught me) now a retired chef.. I enjoy watching you way of doing it, always gives me idea's... Sorry for babbling on... Merry Christmas..
Watched and made your instant pot beef stew yesterday using sirloin. Very good. I added a bay leaf only to it. Ate two small -medium bowls. The vermouth and thyme and soy sauce took it over the top. Made a big pan of cornbread on the side. thx sam

Made a version of this last night and it turned out pretty dang good! Replaced the mushrooms with additional carrots, potatoes, and celery and used a red wine rather than vermouth. Just a quick FYI, I increased the ingredients by 50% (3 pounds of meat) and it did fit in the Instapot - barely. I also had to increase the liquid by quite a bit more. Fun recipe, fun show! Thanks Sam!
My wife is NOT a beef stew gal but when I followed this recipe (using a slow cooker) she was wild about it! I made a big batch that covered dinner for two nights and one more in the freezer. It was served in a bowl with French bread on the side on a chilly Boston evening. Luscious is the word! Going to try it again in our newly acquired insta pot. my wife and I made this tonight and it was... decadent. Seriously, to die for. The flavor was perfect - the meat, carrots, and potato were all melt in your mouth. There was just enough liquid to glaze everything... seriously fantastic!
It's so cool that since your UK travels you've been including British dishes like this beef stew, it helps people understand what real everyday British food is all about. BTW ... serve it with 'rustic' thick cut , hot crusty bread, sourdough works well ... or mash if you prefer ... delicious.
Made this last night - first time using an Instant Pot. I'm blown away by this thing. Not sure where I've been all this time but I'm happy to have one now. Stew of this quality would have taken 3-4 hours normally. I followed your recipe except bumped it up probably another 50% or so (I have a 7.5 qt pot), and deglazed with sherry, brandy, and red wine. Also used a little bouquet of fresh thyme, rosemary, and sage and added a splash of fish sauce. Home run.
I made this last night and have to agree it is amazing. I increased the beef broth to 1 cup, added a zucchini, and a 14oz can of chopped tomatoes. As the recipe calls for, stir well to get the liquid to the bottom of the pot. Otherwise your IP will shut off and give you the "burn" display. I used Russet potatoes which broke down enough that I didn't need any corn starch. I also deglazed with red wine since I didn't have any vermouth. Will start making this on a regular basis.
Last week we set 2 high temp records. This week, we're not getting above 70, and by the end of the week we'll be lucky to hit 60. Winter is going to slap us in the face this year.

You must be talking about S.L.C. UTAH Cuz that how we roll with temperatures "If you want to see the seasons change every 5 minutes come to S.L. and stick around for 20 minutes. No lie! I hate it but, than again I love it.
The pin you can see has a groove at the top and is solid on the bottom. When it isn’t pressurized, a second spring pin (sits horizontally and moves in and out with the turning of the lid) is able to compress and allows the lid to turn. Once pressurized, the pin you can see is sticking out and the increased diameter (because the lower part of the pin doesn’t have a groove) prevents the horizontal pin from compressing.

I added some red, orange, and yellow bell peppers, a few jalapenos. two types of mushroom (baby bella and oyster), chipotle chili powder, and smoked paprika. So a little bit spicy take on beef stew but fantastic! I forgot to coat the meat with flour before searing, but I think it turned out fine served over a bed of rice. Not too hard to make also.

I used my Instant Pot for the first time last night. It had been in storage for about 4 years. This recipe coupled with an intro to the tool from another UA-camr really demystified the device and the device’s potential. The stew was an instant hit! (No pun intended)
I just tried this one, it's very good. I normally don't like making braised beef dishes because it takes all day. The pressure cooker is perfect for this. One thing though, you might get a burn notice or "add water" depending on the pressure cooker you have. There's way less liquid in this than what you'd typically put into a stew. If you just wait a few minutes and try again, usually everything will be okay. Water will come out of all the ingredients which will solve what the pressure cooker is complaining about.

I make beef stew in the insta-pot all the time. The one thing I would suggest to do at the end is add a package of frozen peas. They will cook in the hot stew without getting mushy.

You have no idea how happy it makes me to see that I am not the only one who has issues getting the lid on sometimes. I've even had to have my husband do it for me before.
Pin is up because pressure inside the pot is bigger than outside (which is atmospheric pressure), and so it's buoyant (because pressure and therefore force is bigger at the bottom face of the pin) but capped by some mechanism so the pin does not go flying into your eye. As soon as pressure inside the pot is back to atmospheric pressure (when you can open it), the pressure on both faces is equal and so it feels no force due to buoyancy, dropping down due to gravity and being stopped again by the mechanism so you don't eat it. Looks very simple and delicious Sam, definitely going to try it!
Beef stew like this is so easy and so comforting and tasty. Get a slow cooking pot, chuck it all in in the morning, put it on low and come back end of the day with your dinner ready. Soak up the gravy with some fresh crusty bread , yummy

This is how I make beef stew also, except at the end I mix cornstarch and McCormick brown gravy powder with cool water to add more gravy flavor and it’s perfecto
Looks delicious! If you want the answer to why it goes down instead of up, is that the pressure inside is pushing up. So when it’s done that piece goes down because theres no pressure.
I always keep my Bug A Salt / With Lazer handy whenever I Grille.... Once this summer I took out 10 flys... Perfect Birthday Gift for the out of doors cook... Last time I used my Instant Pot ( a few weeks ago) I cooked Venison Roast...... Turned out pretty good.
i've done beef stew in my instant pot. - 90 minutes. Flour and brown beef, then add the raw veggies adn beef broth, set pressure cooker for 60 minutes. PERFECT!
This is basically an Irish stew. We make this in a slow cooker. Basically same instructions but leave it on low and cook for 4-6 hours. Slow cooker consumes very little electricity. We have a side of very buttery mashed potato. Absolute go to on a cold Irish winters day.
I had an Instapot, it was more work than my Presser Cooker that I use on the stove. It gets hot instantly and worked better. I know a lot of people are afraid of the old fashioned pressure cookers but they are easier to use and don’t take up so much room.

Dude this is almost perfect. Perfect would be if you added a bay leaf or two. Bay is an essential flavor in beef stew.

Make sure all dog poop is cleaned up from yours & neighbors yard. Flies breed there.

As a former sailor, who used to live just down the road from you (PB), you sure do drop the F bomb a lot. The stew looks F-ing fantastic.

i don't have an instant pot, but put all of this in a crockpot around lunchtime. came home from an evening of youth soccer games and this hit the spot! the parsley added at the end makes it extra 👌!

Pin is up because pressure inside the pot is bigger than outside (which is atmospheric pressure), and so it's buoyant (because pressure and therefore force is bigger at the bottom face of the pin) but capped by some mechanism so the pin does not go flying into your eye. As soon as pressure inside the pot is back to atmospheric pressure (when you can open it), the pressure on both faces is equal and so it feels no force due to buoyancy, dropping down due to gravity and being stopped again by the mechanism so you don't eat it.

Beef stew like this is so easy and so comforting and tasty. Get a slow cooking pot, chuck it all in in the morning, put it on low and come back end of the day with your dinner ready. Soak up the gravy with some fresh crusty bread , yummy

This is how I make beef stew also, except at the end I mix cornstarch and McCormick brown gravy powder with cool water to add more gravy flavor and it’s perfecto

Looks delicious! If you want the answer to why it goes down instead of up, is that the pressure inside is pushing up. So when it’s done that piece goes down because theres no pressure.

I always keep my Bug A Salt / With Lazer handy whenever I Grille.... Once this summer I took out 10 flys... Perfect Birthday Gift for the out of doors cook... Last time I used my Instant Pot ( a few weeks ago) I cooked Venison Roast...... Turned out pretty good.

i've done beef stew in my instant pot. - 90 minutes. Flour and brown beef, then add the raw veggies adn beef broth, set pressure cooker for 60 minutes. PERFECT!

This is basically an Irish stew. We make this in a slow cooker. Basically same instructions but leave it on low and cook for 4-6 hours. Slow cooker consumes very little electricity. We have a side of very buttery mashed potato. Absolute go to on a cold Irish winters day.
I had an Instapot, it was more work than my Presser Cooker that I use on the stove. It gets hot instantly and worked better. I know a lot of people are afraid of the old fashioned pressure cookers but they are easier to use and don’t take up so much room.
