Ingredients:
1 cup warm milk
3/4 tsp instant dry yeast
2 tbsp sugar
2 + 1/4 cup all purpose flour
1/4 cup melted butter
Oil, for frying
Filling
Pastry cream/ custard filling
Caramel top
1 cup sugar
1/4 cup water
Method
1. Add flour, sugar, yeast, milk and melted butter in a bowl. Knead the dough using a stand mixer or your hands till it all comes together and forms a smooth, non sticky dough.
Do the window pane test to check if the dough is ready.
2. Line another bowl with oil and place the rolled dough carefully in it. Cover it with a damp cloth and let it proof in a warm place for 1-2 hours till it is doubled in size.
3. Once the dough is double in size, knock down the dough and place it on a floured surface to knead again.
4. Knead for a minute and divide it into equal portions (70-75g each)
5. Place these divided dough balls onto parchment paper and let it proof again for another 30-60 mins till doubled it size.
6. Heat the oil for frying and once it is hot enough, carefully fry the doughnuts on each side till a nice golden brown colour is achieved.
7. While the doughnuts are cooling, make the caramel for the top coating in a heavy bottom pan using the given quantities.
8. Make small holes on either side of the doughnuts and fill them with pastry cream or custard using a piping bag.
9. Carefully dip the top of the doughnuts in the caramel till it’s nicely coated and let it cool for a few mins.

//In a bowl being evaporated:
-Add 1/4 cup of butter and leave it until it is melted
-Add 1/2 cup cacao powder and 1/2 cup of powdered sugar
stir for 2mins
-Add 1/4 cup of water

I just took the ratio used here
Like I halved the amount used in the recipe
so it was 1 1/8 cup
so I took one of my teacup and measured it that way

Just buy a custard powder( in any indian grocery store) boil the milk and add the custard powder stir it until it gets thick!
just simply take custard powder mix with milk and sugar for sweetness if u want and i usually sometime add vanilla extra for vanilla taste

Hi everyone can anyone pls help me, every time when i prepare and keep donut balls to rest in butterpaper it always stick to it , sometimes i put it for frying directly by even after frying in oil that butterpaper remains sticking to it
Try greasing the paper before placing the donuts. Also if it is sticking you might have to add a little more fat to your dough, either a tablespoon of butter or any flavourless oil

This is a different kind of yeast that the guy in the video is using. This yeast need not be fermented seperately in lukewarm water

@@himachan1814 this is instant yeast in the video which should be added directly into the dough. Dry yeast is supposed to be soaked in warm milk/water along with sugar to active first.
