I'm from Portugal and here it's called 'Bolas de Berlim' ('Berlin Balls'). Traditionally they were filled with a special Egg-Cream, or eaten without any filling. From some time now, some places/pastry shops also make them with these two fillings (vanilla & chocolate). Eaten on a beach day, at Summertime it's really good! 😋
In Germany it has three names 😂 1. Berliner (where the Portuguese name took its inspiration it appear) 2. Krapfen 3. Kreppel In Bosnia we call it Krofna (similar to the other German names). The strawberry jam filled with powdered sugar is probably my favourite. Well any jam really 😂
@@Pekara121 Very interesting to see the same 'root' and then the different variations in each country. Thank You for sharing. 🙏 All of them simply delicious!! 🤗🤤
I'm from Argentina and we call it "Bolas de Fraile" (Friar Balls would be in English) and same here pastry shops sell them whit dulce de leche, Custard cream or whit out filling, Also if you live in barrios (Neighborhoods) in the mornings or afternoon People on bicycles go by selling to the neighbors to have breakfast or a snack in the afternoon
In the Czech Republic we call it "koblihy" and we fill them mainly with jam. They can be bought in the store at any time, but at home we usually bake them around Easter. We also make other types of pastry from the same dough - vánočka ("Christmas bred"), jidáše ("Judas"), mazanec ("flatbread")... it´s so delicious!!!🍩
Every country has something like that 🙂In Germany it's called Berliner/Krapfen/Pfannkuchen (and dozen other names) and filled with jam as well.. i think the basic recipe is very old

@@Yassi_gorl I suggest not using powdered milk because it may not form or taste like the usual. However, it can be a substitute if you're really in a budget but the texture and taste may suffer. Try to adjust it to the taste that will be more preferable to you. 🙂
@@Yassi_gorl Actually, evaporated milk is better than powdered milk. It's like same as the tutorial. I don't think you need yeast for the custard. It will make small air bubbles inside the custard. Well, experiment and make experience out of it. I would love to know too. 🙂
Got a craving for doughnuts and came across this recipe. Absolutely drooling now! One day when I have more time I will make these, but for now it would have to be a quick trip to the supermarket to satisfy my craving. My mother used to make those creams, scrumptious!
In Germany we call them "Berliner Pfannkuchen" or only "Berliner", what you can translate as "Berlin pancakes". The traditional are only filled with strawberry or rhasberry marmelade.
I just cant wait for technology to become better and make that "take what you want from inside the screen"~ Edit: omggg 461 likes I feel like I'm so popular thx u guys😭
they look exactly like the ones i ate in poland 🤤 you must know, in poland there are shops/bakeries which sell only these kind of donuts with tens of different stuffing and they´re making fresh every few hours. The smell is incredible and so is the taste :)
@@mariacosta-yn8om But the Czech donut is filled with jam in the middle of the donut. The German ones are cut and then filled. But as I already wrote, Bohemia and Moravia were part of Austria and then Austria-Hungary for 400 years, and we still had about 3,000,000 Germans, so we have very similar recipes. But in this video it is filled in the middle of the doughnut, so I think that it is our Czech doughnuts.

I just love this., no frills just someone at home make a meal with love for them. This to me is the way all cooking videos should be done, unless certain required.
Update May 2023 : After a year or so, I finally tried the recipe . Adding the butter to the dough was suprisingly fun and not that hard, as long as you have a large surface to work on (so you can properly knead the dough). Fo the frying part, I think my oil was too hot : the outside and a small part of the inside cooked fairly quickly, but the "core" of the donut was uncooked. Oh well, error's on me, next time I'll leave them for longer. More importantly, it tastes very good !! I couldn't do the fillings because I didn't have the ingredient, but even the simple donuts coated in sugar taste good, and one is enough to fill your stomach. I will definitely try again, with a proper frying technique and fillings ! Thank you for this recipe Hidamari~ 🧡
▷Directions: 1. Make custard cream. Beat 3 egg yolks, add 50 g of cane sugar and mix until whitish and thick. Add 16g of plain flour and mix until the powderiness disappears. 2.Put 250 ml of milk and vanilla beans with seeds removed in a small saucepan and warm until it does not boil. After adding to the egg liquid in (1) and mixing until homogeneous, return to the pot and cook the custard over medium heat. 3. Strain the custard cream with a net to remove the vanilla pods, apply a tight wrap and apply to ice water to remove the coarse heat. 4. Make chocolate custard cream. Finely chop 50g of sweet chocolate. Beat 3 egg yolks, add 45 g of granulated sugar and mix until whitish and thick. Add 16g of plain flour and mix until the powderiness disappears. 5. Put 250ml of milk in a small saucepan, warm it until it does not boil, add the egg liquid in (1) and mix until homogeneous, then return to the pot and cook the custard over medium heat. 6. Add 50 g of chopped sweet chocolate to melt the chocolate and strain the custard cream through a net. Apply adhesive wrap and apply to ice water to remove coarse heat, and when cool, cool in the refrigerator. 7. Mix in a bowl with 350g of strong flour, 150g of plain flour, 70g of granulated sugar, 6g of salt and 6g of instant dry yeast. 8. Add milk to 2 whole eggs, weigh 285g, mix, add to flour and mix. When mixed, put it on a large cutting board and knead until smooth. 9. Add 45g of unsalted butter brought to room temperature and knead until the butter blends. Roll it neatly, put it back in a bowl, wrap it, and let it ferment for about 1 hour until it doubles in size. 10. After fermenting, degasse and divide into 12 equal portions (74-75g), roll lightly and allow 15-20 minutes of bench time. 11. Degassing the dough, shape it into a circle so that the middle is flat, cover with plastic wrap and leave to ferment for 45-60 minutes. 12. Remove the plastic wrap and dry the surface for about 10 minutes. If the dough does not stick even if you stroke it gently with your fingers, fry it in frying oil warmed to 170°C for 2 minutes at a time (4 minutes in total). 13. While the oil is drained and warm, pierce the dough and sprinkle it with granulated sugar (chocolate custard is a mixture of 30 g of granulated sugar and 8 g of cocoa powder). 14. Boil the custard cream and put it in a piping bag, filling it generously with custard cream.
In Portugal we call those "Bolas de Berlim" (translation: Balls of Berlin) and they are great! I am very tempted in trying out this recipe even though I think I will place more custard since it only went until the middle of the Donut (and the bottom part will become a bit dry!)

From some time now, some places/pastry shops also make them with these two fillings (vanilla & chocolate). Eaten on a beach day, at Summertime it's really good! 😋
In Germany it has three names 😂 1. Berliner (where the Portuguese name took its inspiration it appear) 2. Krapfen 3. Kreppel
In Bosnia we call it Krofna (similar to the other German names). The strawberry jam filled with powdered sugar is probably my favourite. Well any jam really 😂
@@Pekara121 Very interesting to see the same 'root' and then the different variations in each country. Thank You for sharing. 🙏 All of them simply delicious!! 🤗🤤
I'm from Argentina and we call it "Bolas de Fraile" (Friar Balls would be in English) and same here pastry shops sell them whit dulce de leche, Custard cream or whit out filling,
Also if you live in barrios (Neighborhoods) in the mornings or afternoon People on bicycles go by selling to the neighbors to have breakfast or a snack in the afternoon

in Chile we call it Berlin,
The flipping of the donuts in the oil was unnecessarily satisfying
In the Czech Republic we call it "koblihy" and we fill them mainly with jam. They can be bought in the store at any time, but at home we usually bake them around Easter. We also make other types of pastry from the same dough - vánočka ("Christmas bred"), jidáše ("Judas"), mazanec ("flatbread")... it´s so delicious!!!🍩
This is typical Brazilian, we have the same one in the video with the same filling and also with dulce de leche filling
these are also sold in portuguese beaches but they go by the name “bolas de berlim” which literally translates to berlin’s balls 💀
Every country has something like that 🙂In Germany it's called Berliner/Krapfen/Pfannkuchen (and dozen other names) and filled with jam as well.. i think the basic recipe is very old

How did it go? ^^
It’s true that how did it go ?
At least answer him or us
It looks similar to what we in Hawaii would call a malasada, a Portuguese-influenced fried dough rolled in sugar. Great video. Even the construction work and cars in the background were soothing.

Love the video! You can also use condensed milk to combine with the egg yolks in making custard. It'll save you so much time and effort.

Can i used powdered milk?
@@Yassi_gorl I suggest not using powdered milk because it may not form or taste like the usual. However, it can be a substitute if you're really in a budget but the texture and taste may suffer. Try to adjust it to the taste that will be more preferable to you. 🙂
@@Keisujunko ty i tried evap milk but is it ok?
Im really worrying for the outcome
I put little yeast and i might failed again hope not 🤦♀️
@@Yassi_gorl Actually, evaporated milk is better than powdered milk.

@@lukasfilipin1162 I guess that’s why in portugal we call them bolas de berlim ( it literally translates to berlin’s balls ahah)

In Portugal we call these Bolas de Berlim, they're so yummy, especially in the summer, when you go to the beach there is usually an old man selling them.
Thanks for a great filled donut recipe from start-to-finish. I really appreciate the time lapse photography showing the rise.
Thank you for the time given to create, make, film, edit, and add subtitles.
I just love this., no frills just someone at home make a meal with love for them. This to me is the way all cooking videos should be done, unless certain required.
I wish more cooking channels were like this.
I will definitely try that this summer ! My whole body is asking me to do so
Update May 2023 : After a year or so, I finally tried the recipe .
Thankx
Um... They didn't boil the custard cream in the last step, only mixed it 😅
Is the cake flour 150gm or 15gm? Looking at the video it was 15gm. I tried with 150gm and the dough became dry ☺️

I've run into that problem too a few times until I realized you have to let them rise according to the instructions. The fluffier and airy they are, the more likely they are to cook all the way through.
