H Timothy. Shortcrust pastry is very easy to make, with or without a processor. Give it a try. If you don't have a processor you have to rub the cold butter into the flour until it resembles coarse breadcrumbs, then just add the egg and water and stir around to form the dough.

Our household is small nowadays, just the two of us, so I tend not to make single large pies very often unless there are guests to feed because leftovers become a bit of an issue. So I'm always looking for ways to shrink recipes I like (and savory pies are a favorite) down to more manageable portions. Happily, many recipes like this work perfectly assembled as a batch of single-serving sized pasties rather than one much larger pie. Allowed to cool fully after baking, them individually wrapped tightly in clingfilm then put in a ziplock bag, the pasties freeze very well indeed. Frozen pasties, unwrapped then popped into a 350 oven for about 20 minutes, come out beautifully.
Homemade corned beef pie is just so warming and hearty.... Definitely a UK family favourite 😋 Just lovely and especially on New Yrs Eve to indulge after the fireworks 🎇 My tradition that 🥂

Well, Geoff, I do like my pies 😀 I'd make a family sized one when entertaining but normally make individual ones - great for snacks. I usually make corned beef and potato pasties as they're a memory from a bakers in Bristol (long gone, sadly) Corned beef (brisket) caught me out when I moved to Ireland. Tasty, though. All the best. Hi Bernadette. There are a few ways to help with the pastry. The first is to make sure the filling isn't too wet, so allow the potatoes to release all their steam and cool somewhat before mashing them. Another is to ensure the oven is at the right temperature. Using an oven thermometer helps with that, as some ovens don't reach the correct heat as set. You can also bake this kind of pie for longer, covering the top with foil to prevent browning. The filling will be fine cooked for longer. Another suggestion is to place a pizza stone or a baking tray in the oven as it preheats and heat it for longer. Then place the pie in the tin on the stone/tray the heat from that will give a quick start to baking the bottom. My last suggestion is to sprinkle some dried breadcrumbs over the pastry base before filling with the corned beef/potato mixture. The crumbs will absorb some of the liquid released from the filling during baking.
I use a puff pastry top and put Worcester sauce into the mix. And made one with sweet potatoes and red peppers I do like to test different veg with cornbeef pies .

Ah, we do have canned corned beef and brisket(sliced) corned beef too. Usually it's corned beef hash (minced with potatoes in a tin) or canned minced corned beef alone. Is the brining process different?
Hi Marco. I am not entirely sure how the canned corned beef is cooked before being shredded and pressed. But it is also known as salt beef or bully beef, so there is probably some element of brining. However it doesn't have the spices that the vacuum sealed brisket for making corned beef has.
Canned corned beef in the USA is the same as in England. Usually it’s imported from Argentina. it’s relatively cheap and a good staple to keep in the pantry. I like to make corned beef hash with a can of corned beef and I add onions then brown it in the broiler. I’m going to try your recipe for the pie. Thank you for sharing with us.

When I was.a child Fray Bentos was the most common brand, from Argentina, though the city of Fray Bentos in in Uruguay.

I am back home now. I did not know that corned beef in the U.K. is different from corned beef in the U.S.A., so I learned something today.
Oh yes, it mainly comes in tins, or slices, already cooked.

H Martin. I am sure changing the veg can produce some great pies. Personally I always prefer shortcrust pie crusts over puff pastry.
