This was really good. I added 1 tsp of instant coffee granules and a pinch of salt to elevate the chocolate taste. This is definitely the go-to chocolate sponge cake for me from now on!

Even though the oil was heated in the beginning, it should've been fully neutralized by all the added milk and ingredients (notice how the egg yolks didn't cook).
This cake become our family regular dessert or snack. Due to gluten intolerance, I replaced the cake flour with brown rice flour, it still taste so great! Thank you for your recipe!

Hi apron. Can i just bake the cake in a pan directly to the oven? I mean without putting it anymore in a rectangular pan with hot water for reason that may oven is not spaceous. I baked today the cake was soft and fluffy. I bake sponge cakes using similar method before and 6 x 3 (h) inches round pan is usually just nice for recipe with 3 large eggs. I thought for choc sponge would be different but my cake domed so high and cracked. Too much cake batter? Temperature too high? Next time I would probably use two 6in pans to make 2-layer cake or just reduce recipe accordingly to 3 eggs. However good spongy light cake with just tinge of sweetness. A keeper with minor tweak :)

你好yap ruby,如在烤箱呆着门需要开一点小缝以防止烤箱温度过高。蛋糕回缩可能是烤箱温度太高,你也可以烤好后马上把蛋糕取出在桌上敲几下也是可以防止回缩的
